The hallmark of culinary superiority is the owner's guiding hand. Philippe, the owner, is always around (at least when we come to dine) and this keeps things in perspective.
Tymad Bistro is the acknowledged stop for the authentic french experience. Not in the 5-star or Michelin star category, but in the "favorite cafe on the corner" that, if in France, you would be frequenting on a VERY regular basis. The croissants and baguette are sublime. Freshly made, authentic, pastry-crunchy croissants that only the French can make. Couple this with a cup of coffee, and order a simple three-egg omelette, and one has the perfect menage-a-trois to start off a long day. The baguette are the best in Cebu. Also freshly made and ready at 10 am sharp.
The crepes are what made Tymad Bistro famous in the first place. Made with buckwheat, the crepes are a departure from the sweet variety made famous by local chain Cafe Breton. Frequent diners who know their crepes allege that the ones from Tymad are the real thing. A friend from Brittany in France swears by the authenticity of these crepes.
The menu has not many items. They do a few things really well, and focus on those.
