We had the most fabulous dinner at Amber. From the initial greeting at the restaurant entrance to our departure after practically closing the place [waitstaff preparing other tables for the next day while we were still seated, feeling unrushed and still welcome].

When we arrived, we were not sure if the rest of our party was there; the maitre d' immediately seated us in the comfortable lobby area and offered me a sparkling water. As our party WAS there, we were promptly escorted to a wonderful table in the middle of the dining room. Within moments, champagne appeared [our host pre-arranged] followed by bread service. We were offered a selection of three freshly baked breads and a choice of salted or unsalted butter or olive oil. THAT was a first for me, the choice of salted or unsalted butter! And the presentation was unique and aesthetically pleasing.

I ordered the smoked salmon as my appetizer. The presentation was nothing short of theatrical. I really don't want to reveal details or I would spoil the moment. My husband had the sea urchin, which arrives in a chic porcelain sea urchin bowl. Both appetizers looked and tasted amazing. Our host had the foie gras, which he seemed enthusiastic about.

My entree choice, the sea bream, was perfectly cooked; with a seared exterior and tender, just-done interior. Again, everything about the dish worked in harmony; the accompaniments, the sauce.

We were too full for dessert, but did not dismiss the elegant and delectable sweets which were brought to the table in a three-tiered box, opened ceremoniously by the waiter. They were excellent.

All in all, Amber did not disappoint in any way.

When last in Hong Kong I dined at another French two Michelin star restaurant - Spoon by Alain Ducasse - and found it to be disappointing. I'm pleased to say that Amber - in service, imagination and quality - is vastly superior. More detail should you wish...

From arrival, staff provided the highest of service - from the maître d' to the wait staff to the sommelier. Dietary and allergy requirements were happily catered for - the maître d' even suggesting if the numerous vegetarian options were not suitable they could arrange a degustation.

The restaurant itself is intimate and tastefully decorated, with soft Frank Sinatra-esque music playing. Tables are a reasonable size and well spaced.

The food was of the highest standard, with the smaller dishes complementing the others beautifully. If anything, I found the portions of the starter and main were a bit on the large size. In terms of the menu,
* cucumber and apple amuse bouche and lollipop of tomato and goats cheese, followed by
* cauliflower velouté topped with truffle, followed by
* starter of heirloom beetroot with winter berries and spiced red wine reduction vinaigrette, followed by
* main of punalette prepared like a risotto with truffles, followed by
* lemon custard, champagne sorbet and berry compote, and
* grand marnier soufflé as dessert

And to finish, a fine selection of petit four - amongst them two types of marshmallow, and a caramel with edible wrapper.

With champagne to start and a half bottle of Morey Saint Denis Burgundy, the bill came to $2700 HKD.

A final note - included as constructive feedback - service was extremely personable (even referring by name). However it was somewhat overbearing to start - specifically multiple staff standing in close proximity to the table. Once I had placed the order this did however improve, being attentive but not overbearing throughout the service.

Had the New Year's Day lunch here food was excellent and matched perfectly with wines. Service was great for first half of meal but when the European restaurant manager left it did degrade somewhat to standard slipshod Hong Kong style.

High expectations from other reviewers but that is a curse when the expectation is raised and the food is somewhat above average but not extraordinary.

Read the reviews, looking forward to the dinner. Food was a 4. Had the 8 course degustation. Quality was good, but a bit uninspired. Two courses of foie gras was too much. Timing of dishes was a bit off. 8 courses took 2.5 hours, and a 9pm sitting dragged a little. The cheese course was a bit amateurish: a wheeled cart to the table, 'pick 5 cheeses', explained the choices in hushed tones with a Chinese accent left a little to be desired. Rest of the deserts were tasty. Service prompt but clinical; minimal expression from the staff, minimal conversation, minimal effort. Good service, very efficient. Sommelier knowledgeable, prompt. Setting was beautiful. Wouldn't go back however.
