Tai O is a nice refreshing change from the hustle and bustle of city life. It is quaint and traditional. Located at Lantau island, it is nice and green, sandwiched between the sea and the mountain. You can get to wander around in the meandering village built on stilts. Peep into traditional fisherman life, and how they make the famous produce of shrimp paste and salted fish. There are lots and lots of traditional chinese snacks done the old fashion way. And you can also have fresh seafood which you buy from the open market and bring to one of the many seafood restaurants for them to cook to the way your like. Of course taking a boat cruise is also delightful, there is a 15min ride through the canals in the village and a 30 mins one that brings you to the open sea to see the pink dolpins (hopefully) :). Be prepared to spend half a day, just soaking in the atmosphere of this wonderfully preserved fishing village. On one hand, very tourist friendly and yet on the other - still clings on to the old way of doing things. What more can you ask for in Hong Kong :)
