It was a nice surprise to discover this new French bistro in Sheung Wan.
I loved the mushroom soup with pieces of Beaufort cheese!
The sole was delicious as well. I will definitely come back to taste the other dishes.

We went with friends mid-week. The decor and ambience of the place is lovely.

The food is good to very good dependent upon what you order. Very good is the wild hare pasta dish, the sole, macaroni cheese. The Teryaki Salmon was good but was a little underdone for my taste, it was just an inch past raw. The pigs trotters on toast was bland.

The desserts are an experience. Not all sweet, some savory. Presented beautifully.

The wine list is a little expensive and they are already serving vintages a year younger than on their wine list, without telling you.

This place has lots of potential. BUT the service is amateur hour. You can sit there trying to catch someone's eye discreetly, eventually you resort to your arm raised at full length for 5mins or more before anyone comes to you. The wait staff are busy walking around looking down at certain tables but don't scan the room properly. The restaurant manager is so busy being sociable that he doesn't make sure his team is doing their job. When placing food on the table or clearing the table, they don't walk around the table, they simply lean straight across you to plonk the food in front of your friend. They'll interrupt you when you're in the middle of a conversation to see if you want to order anything.

The restaurant is new and it has huge potential. However the service is such a disappointment that I am reluctant to go back.

Hong Kong is full of restaurants but it is always good to welcome a newcomer to the scene especially one as well prepared as Upper Modern Bistro.

It is common knowledge that the restaurant business is a tough gig and Hong Kong is a tough city so I have the greatest admiration for the folks who continue to add to the vibrant eating scene in this great city.

Chef Philippe and Manager Gregoire have created a truly modern Bistro in the heart of Sheung Wan a newly developing area above Hollywood Road.

It had been open less than a week when business friends and I chose to have lunch there, we knew the chef and it was somewhat in the nature of a support visit for this exciting new venture.

The decor was very very modern and extremely tasteful the only jarring note being the stools at the bar which did not seem to fit with the rest of the decor. The tables are of a good size and the chairs comfortable, there is also an open terrace like area which is planned for the smokers when approval has been secured from the authorities.

The kitchen is at eye level and can be seen from the whole seating area it also provides chef Philippe with a captain's view of his customers.

The menu is uncomplicated and provides for both a lunch menu and a la carte, we all elected to go with the a la carte.

Starters all looked very good I chose the Snails and Mash (pictured) which was excellent and beautifully presented. My guests both selected the 63° eggs with sautéed mushrooms, crab meat and bellotta ham.

For Mains I had the Atlantic Cod with bellotta ham and vegetables, the cod was cooked to perfection and the oyster emulsion added that extra zest.
My colleagues chose the same dish Sole a la Meuniere with a butternut sauce and sautéed mushrooms.

All of the dishes were declared superb, a fine white burgundy provided the appropriate accompaniment though I am becoming a little concerned at the high price of wines which seem to increase on a far too regular basis.

This Bistro is a welcome addition and I wish it great success, service is good and I am sure that they will quickly overcome any teething problems they encounter.
