M-Bar at the wonderful Mandarin Oriental in Hong Kong exemplifies how good training can pay off. The staff are professional without losing their individualities, which makes them friendly and and smiley and makes me want to go back; which is all that matters. Besides, they make mean martinis and the house champagne (Ruinart) is also excellent. Get there before seven pm to avoid the rush, but even then they bring on extra staff to cope. It's great to see a really pro operation carried out so smoothly and without fuss.
