Very good pickled turnip and lightly salted grilled peanuts.

Three courses peking duck:
A few slices of golden roasted fatty skin came first to be eaten with white sugar: oily but juicy!
Thin slices of breast and thicker slices of leg meat with the traditional pancake leek, cucumber thick soya sauce and garlic puree:
Well executed. Tender duck meat.
The pancake might be just slightly flourly.
Duck soup with cabbage and tofu: very light missing a bit of poultry roundness.
Wok fried minced duck with icedberg lettuce: shredded duck well cooked. Rich caramelised flavour.
This felt a little light as it was a half duck so we went for a mixed appetizer:
Crispy and very tender pork belly
Slightly spicy very good veggies mushroom spring onion ox tongue salad
Slightly flat jellly fish
Good marinated cucumber
Tender rosted pork

Classic oaky Mondavi 2011 pinot noir with no flaws.

Sha Tin 18 remains a nice dining option in Sha Tin, a place we enjoy visiting for lunch and dinner from time to time when we are seeking nice dining environs and good Cantonese food. Meals are on the higher end of the price scale considering the location within a Hyatt hotel. However, meals here are generally quite good.

We've enjoyed their set lunch menu (HK$248 per person) a couple times recently. This is a nice option for sampling a variety of local dishes that are not too foreign and prepared to higher quality standard. The set includes seven items and Chinese tea.

Courses are not served in precise sequence but simply brought to your table in groups and as they are prepared and available. However, you do start with the soup and three dim sum samples first and the rice dish is served last, which is the local traditional custom, followed by desserts. You can eat at a leisurely pace if you like and enjoy a long lunch, which is nice when you have a variety of dishes to sample.

Of the dishes, the soup is nice and the dim sum fine. Of the mains, we enjoy the chilled beef, spring onion main served with marinated tomatoes and the wok-fried mandarin fish with green chill slices most. Of the dessert choices, the the Creme Brûlée is very good as is the Wolfberry Osmanthus Flower Jelly, a popular style local dessert. In the end, we have left our lunches here, quite pleased on both recent occasions.

Service is quite standard here, nothing special but nothing of an issue either. Outdoor dining available, which will become more inviting in the month to come as the temperatures become more favourable. Sha Tin 18 is much more popular these days compared to years past so its best to make a lunch reservation at least a day in advance to secure a table. Dinner reservations are required, particularly if you intend to dine on the weekend.

Good things first, the Hyatt Regency is quite a new hotel, modern decoration and the place is not too crowded if you compared it with other Chinese restaurant in Hong Kong,
It is close to the University station and can be reached by both Red Taxi and Green Taxi (Green Taxi only travel in the New Territories and it is cheaper).

The restaurant is famous for its Peking duck and it's truly tasty. The duck is crispy and tender at the same time.

However, all other dim sum fell flat, they were very average. They were not bad, but definitely over priced for this quality standard. Just take the MTR to Sha Tin Station, which is only 2 stations away, to the Lei Garden restaurant, the dim sum there are so much better and they are cheaper too. Lei Garden is a Michelin starred restaurant yet it is cheaper than Sha Tin 18.

The service level disappointed us too. We needed to ask 3 times to get a baby high chair and again we asked 3 times to get the chili sauce. Maybe the staffs were too busy, but this is just not quite the normal service standard of a Hyatt.

Service in the bar was dreadful with a part of the order forgotton about and the empty plates and glasses not taken away. Although this was a slow night I even had to go from my table to the bar to order a drink
