I did a day tour (Cao Dai temples and Cu Chi Tunnels) and had a good day. We did the itinerary backwards, doing the tunnels first. We got there nice and early, before the heat and large crowds. The guide knew a lot about the history and was able to answer any questions I had (and his English was really good). We then went off to the temple, arriving in time to catch the 12:00 service. The lunch at a local restaurant was really nice (seemed many of the tour groups stopped there) and there was lots of food. Drinks were not included in the lunch (which they did mention ahead of time), but there were a couple of bottles of water in the car when they picked me up in the morning. The car was nice and clean, and the driver was good too. The only negative is that it felt a little rushed.
