I went to Maxim Nam An's with a group of girlfriends on our first night in Saigon. While not super formal, this is an upmarket restaurant with live music; the sumptuous decor feels right for a special occasion. We had a private room which was a visual feast even before we started eating - colorful silk paneling, exotic floral arrangements, atmospheric lighting. The captain was extremely courteous and service was excellent. We had a decadent meal, all of it delicious, but one thing is truly unforgettable - TAMARIND CRAB. I don't usually eat crab but this dish was unbelievably yummy and addictive. We had a great meal, in contrast to the fast food pho we had in the afternoon.
