Hue food maybe available on every corner of the streets (well not quite, but plenty) of Saigon but to find a restaurant that specialised in Hue cuisine and is not. This restaurant been here perhaps around 20 years has hosted a number of world leaders to its charming off the main road restaurant. So avoid to visit on those dates as security will be tight and it will be way to formal and stress on the staffs.
The food here is genuinely Hue cuisine with plenty of dishes to choose from. The sauce accompanied each different dish are also well prepared which is essential for Hue food. Be careful what you asked for , if you ask for extra chilli, as the little fresh chilli served with Hue food are spicy as the Hue's ladies themselves …

If you want to dine in a classic Vietnamese restaurant, Tib restaurant is a very good choice. The food is excellent, though a bit pricey. We have booked the main dining room a few times and enjoyed the experience. However, the restaurant would do well to avoid large groups arriving later passing through your section of the restaurant.

After being given such high praise by a fellow passenger (ethnic Vietnamese now residing in Melbourne, Australia), it was disappointing to say the least to be offered such poor quality food. Who would have thought that the simple Spring Roll could be made to taste musty and mouldy (well this restaurant certainly found a way).
The Micro Herbs and Greens that should leave an explosion of tastes in your mouth with every bite, tasted as if they had been left out for several weeks and then limply placed on our Plates.
The Stuffed Crab (which was a recommendation by a fellow Trip Advisor), also tasted like it had been left in Hessian Bag before being served, Bitter and also full of Crab shell pieces made us decide that two courses was enough.
Shame as the Restaurant itself had a look of History and Ambience about it, and we were really looking forward to a great night of culinary delight, but alas you can't eat Ambience and can only judge on the food served to you.
Maybe it was a bad night for the Chef, but even after leaving most of the food on our plates, and it being obvious to the watching staff, nobody even bothered to offer a comment.
For such a highly recommended establishment, it was certainly a thumbs down from both my wife and I.

Tucked down and alley the Tib was the result of a Trip Advisor search. We were delighted with the atmosphere – old fashioned in an increasingly brash city. The staff give the impression they revere the place – and with justification.

The seating was quickly rearranged for five – never the easiest number in a restaurant.

Our son tried (and enjoyed) the frogs legs "curry" whilst my wife and I shared the clay pot fish with some really delicious vegetables.

Slightly oddly there is a bottle of wine on the table on arrival but when we made it clear we were sticking with lime sodas or beers this was quietly an unobtrusively removed.

Would certainly return if we found ourselves in Ho Chi Ming again in the near future.
