I took part in the tour organized by Sipohn in August 2009 with the user Roadster76 (http://www.tripadvisor.com/members/roadster76 ) . Please refer to his review for all the details!
Sipohn was by far the best thing that could happen to us during our journey. He escorted us around even at night, helped us out with little language problems with the Thai and he was totally flexible to our needs.
When you plan a tour from far away, especially if you have never been to Thailand, you have to be indulgent and accept you can change your mind once you actually see the places. Personally I was not a big fan of the Golden Triangle area while I loved hanging around in the tribe villages. Sipohn was a real blast when he explained to us all the rituals you are supposed to do when you visit a temple, we prayed and did all we had to do to make our wish come true, from throwing sticks spread on a marble, setting a golden fish free in a sacred pond, kneeing in front of a monk to receive his blessing...You don't really do these things when you drive around on your own, some things are not accessible to a traveler if you don't mingle with the locals. Sipohn was a good way to do that.
I recommend you write to him and plan a tour in detail, asking for advice but also suggesting what you want to see. A 5 days tour is definitely a good idea if you want to travel extensively and grasp something more than just the atmospheres of the busy Chiang Mai.

I used to live in Chiang-Mai and thought I knew if fairly well until a friend came to visit! I arranged a tour for myself and my friend with Untouched Thailand. It turned out Sipohn the guide took us to a lot of places off the beaten path and he turned out to be well-informed and funny! We had a bicycle trip through the country side and small villages in the morning and in the afternoon we went for a car ride out to a gorge where we spent the afternoon swmming! It was magical!
