Owner description: The Cooking School at Dar Les Cigognes has been teaching guests the wonders of Moroccan Cooking for over a decade. With over 10,000 participants, we have a huge experience to draw upon. In keeping with the ethos of the hotel Dar Les Cigognes, we are fanatic about fresh, seasonal cooking, and making everything from scratch. Our classes are completely hands-on, involving guests in the preparation of each dish and imparting practical knowledge.All instruction is private--we do not do group classes unless it is a group that is travelling together and want to do their class together. We have a variety of typical formats, but will also create bespoke classes. The classes are suitable for everyone from beginners to professional chefs, and indeed we have even had multi-day classes with professional chefs designed to help them reformulate their own menus to include Moroccan dishes.Our most popular class is called "learn the dish" where a guest will learn one of the dishes on the daily-changing menu. This is a short class of one hour and a bit, which starts with an introduction to Moroccan spices, and then proceeds with practical instruction in the preparation of the dish. We can almost guarantee that whatever the dish of the day is, it will not be one that you will likely find in any Moroccan restaurant other than our own, as we constantly strive to prepare the truly traditional dishes or to innovate within the Moroccan repertoire to give our diners and our students an introduction to the real, authentic Moroccan home cooking. "Learn the dish" is just a class to learn a dish, and is usually given in the afternoons, but other time slots can be accommodated depending on the in-house demand for cooking classes. With 5 professional chefs on our team, this gives us an ability to match the right chef to the student.Another popular format is our 1/2 day class. We do daily morning and afternoon sessions and this is a 4 hour class followed by a meal. Here the student will be involved in the design and preparation of their meal, and learn about how Moroccans construct menus. Our couscous class has been very popular over the years as learning to make couscous from scratch is something easy to take home, and the difference in flavour is astounding. This class begins with a market tour which is focused around the menu that is being prepared and then follows with the participants making each element of their meal, and time permitting includes at lunch starter and main plus desert, and for dinner includes appetiser, starter and main, plus desert. There is usually not time to prepare the desert, also because deserts require setting time, but there is always time to eat desert!We also do a 1/2 day Moroccan pastry and bread baking class. This class is given on Tuesdays and Saturdays only, and apart from learning to make either pastries or breads, the participants also go to the communal oven to bake their preparations, and get rare insight into this magical aspect of Moroccan medina life.We also do bespoke full day and multi-day classes by direct arrangement. Classes are given at both Dar Les Cigognes and sister hotel Riad Kaiss. The Dar Les Cigognes cookbook is available on Amazon UK and US and Riad Kaiss and Dar Les Cigognes both feature in Paula Wolfert's seminal new work The Food of Morocco

“Fun Experience”

I booked this cooking class with my sister-in-law and a friend as a "girls" thing as our kids were out doing the quad adventure. It was a fun and interesting experience. Gemma and Lindy met us in front of Cafe France - it was a pretty big group, thus we split into 2 to do our shopping. Armed with a list, our shopping bags and a wallet Lindy was our souk guide, showing us the spice market, the veggie market and the grocery store as well.

The class was held at a Riad nearby where refreshments awaited us. Stations were set up for all the students and we pretty much just jumped in and prepared the recipe assigned to us. We had Gemma and a few ladies assist us in our chopping, frying, mixing and cooking. It was interesting to walk around and check out what each station was preparing. After a couple of hours, a lovely spread of various salads, tagine, couscous, and dessert was ready for us to sample. Water and wine was provided too. It is a fun way to learn Moroccan Cuisine as well as meet a great group of food lovers & wannabe cooks.

“Souk Cuisine - wonderful birthday present”

I booked the Souk Cuisine day for my partner’s 30th while we were in Marrakech. The whole thing was excellent – from Gemma and the others who ran the whole day, to the food. We were a group of approx 14 people, split into 3, for the souk shopping. We had a list, some money, a shopping bag or 2 and a guide. Our guide was Samir, a friend of Gemma’s who works in one of the spice shops. We learnt so much from him! The souk shopping was brilliant, a great way to find your way, learn about haggling and shop like a local. Then it was on to the Riad (very close by) for some water and a sit down. We then spent time preparing all of the food at different stations for different dishes. We also had a copy of the recipes from the day to take home with us. And then of course we ate it all! The food was wonderful, and knowing we had cooked it was great. It was also lovely to spend the day with other people, getting to know them and relaxing. Would thoroughly recommend, great value for money

“Great experience and wonderful food!”

Myself and my girlfriend did this on our second day in Marrakech with four other like-minded people, which I thought was a perfect number. We started by shopping for ingredients in the souks. This was fun and it enabled the group to bond. It was also very informative, and we were introduced to all the spices and told about all the key ingredients involved in Moroccan cuisine. We also visited a small bakery to buy our bread. And for us it was great to explore and get involved without worrying about getting lost or jumped on and expected to part with all our money. We went back to a very beautiful riad that was a welcomed cool oasis from the heat of the city. The kitchen area was beautiful and well equipped. We cooked a variety of traditional dishes between us, learning some very interesting techniques along the way, all under the guidance and watchful eye of the two dada chefs. It finished with a sit down with wine and good chat with what turned out to be some of the best food we experienced in Morocco. Everything was superb and it exceeded our expectations.

“A must!”

One of the best activities we've done during our 4-day stay in Marrakech was the cooking workshop at Souk Cuisine. First Gemma and her colleagues will take you into the souks to shop for all the ingredients needed, which is a very fun and interesting experience. It's a great way to learn more about the local lifestyle. Back in the riad we prepared various dishes, under supervision of Gemma and very skilled Morroccan cooks. And of course the best part was tasting the delicious food we've cooked. We have received a recipe booklet with all dishes, so we will definitely try it at home as well. If you want a fun and tasty experience in Marrakech, a workshop at Souk Cuisine is a must!

“Enjoyable, informative day of Morrocan cooking”

I often take cooking classes when traveling abroad as a way of bringing the experience home and meeting like-minded travelers. This class was one of the best I have taken. The 5.5 hour day began with shopping for ingrediants in the medina, with guidance from staff members. We then proceeded to a well equipped kitchen and prepared a varied meal of Morrocan dishes with instruction from local home cooks. Snacks and drinks were provided. The day culminated with a lunch of our creation. Non-cooking spouses were welcome to partake in the meal.
