I had the privilege of staying at Dar Roumana in the beginning of February after a week in rural Morocco and decided to treat myself to a bit more refined lodging. I was more than pleasantly surprised when I walked through the front door. This is an absolute gem in the Fes medina and a haven away from the hustle and bustle of the old city. The rooms are gorgeous, spacious and immaculate. The staff helpful, friendly and accommodating for whatever needs I had. Vanessa and Vincent are great hosts and Vincent is a true magician in the kitchen.

In one word, perfect. Absolutely perfect (ok, 2 words...)

We stayed in the Dar Roumana for 5 nights from 6th January 2013, in the Yasmina suite. I have to say I have never slept in such a beautiful room. The four poster with white hangings is very comfortable, and as you sit up in bed you see the pretty doors that lead out to the private balcony overlooking the city. There is an attractive seating area, but the most stunning feature is the mosaic tiling on floors and wall. It is worth paying extra to have the privilege of staying in this lovely room.

The central courtyard of the riad is also full of historic mosaic work, carving, plasterwork etc, interspersed with attractive greenery. Some bedrooms and a sitting room are accessed from this area. It was quite chilly at the beginning of January- patio heaters had to be moved across to ensure we were warm enough as we ate from the delicious menu.

The roof terrace was another beautiful feature, with views to the hills behind where colourful dyed skins are dried in the sun during the daytime, and the whole city of Fes in the other direction- a photographer's delight!

Vanessa, Gail, Vincent and Mohammed looked after us very well, and were full of helpful suggestions, and Fes itself is a friendly , lively and interesting city.

I would certainly return to Fes and stay at the Dar Roumana, but will probably choose a warmer time of year, an Easter maybe.

Room Tip: Yasmina is the best, and worth the extra!

This Dar is a MUST STAY! A friend of mine recommended this place and it was PERFECT! We stayed in the Yasmina room, the biggest room in the Dar, and it's absolutely breathtaking. We had a HUGE room with our private balcony! Vanessa the manager, her husband Vincent the chef, Mohammed, and the rest of the staff were incredibly helpful and always had a smile on their face. The food is excellent! I have already recommended this Dar to a lot of my friends and I can't wait to come back again! Don't even think twice about looking at another place! THIS is the place! Thank you for your generous hospitality! Even our tour guide, Abdul Malek was great! Thank you again!

Dar Roumana is the perfect escape from the fascinating, dusty warren of the Fes Medina. The Dar is a stunningly restored architectural gem, and upon arrival, Vanessa offers the perfect introduction to the city. Rooms are extremely comfortable and beautifully decorated, as are the many public spaces. The view from the rooftop terrace is not to be missed, nor is dinner, prepared by Vincent, a fabulous French chef. A great place to unwind after a long wander around the souks.

Room Tip: The second floor rooms offer more privacy but all rooms are very pretty.

Dar Roumana was the best surprise during our trip to Morocco. Vincent, the chef, is so talented. Everything that he cooks is truly outstanding. The tiger sole that he prepared was really the best I have ever eaten in my life. The goat cheese souffle and the apple tarts were out of this world. The accommodations are really nice and the beds and sheets of exceptional quality. Vanessa, who manages the Riad, is wonderful. She can arrange for guides. She can recommend a good and reliable guide, that could make a huge difference when navigating around the town, once you leave the heavenly comfort of the Riad. Finally, Vincent made lunch boxes for us take for the road and they were superb!! i ate everything except the paper bag!!

We stayed there for two nights. After the first dinner, with goat cheese souffles and freshly baked apple tarts a la mode, we cancelled our next night's reservation to have dinner there again. It was delicious. The chef is fantastic and his wife, who runs the hotel, is extremely nice and accommodating. A haven from the dusty streets of Fez, I highly recommend.

I reviewed Trip Advisor and other travel guides with regards to choosing a riad in Fes. The selection of Dar Roumana did not disappoint our family and friends. It was an excellent selection. The alleys leading to Dar Roumana can be misleading and you might say "oh oh", but once you enter through that door it was like magic. A beautifully restored Riad, very well organized and decorated, very comfy as well. The rooms are big, spacious, quiet with personal bath and shower amenities that could not be found in no other hotel we've been too. Vanessa took care of us once we arrived and we celebrated our arrival at the roof top terrace for orientation and some cocktail drinks hearing the surreal calls to prayers by the muezzin at 6pm. And the food is not be missed, this is possibly the best we have dined in Morocco, Chef Vincent, has a market to table menu, what is fresh today it'll be offered. The food was stupendous and the best, from appetizers to pastry, that we dined two continuous nights. Possibly the best tiger sole ever dined. No details were missed by Vanessa and Vincent, as well as Mohammed and staff. I congratulate them for their personal attention and courtesy. Our stay at Dar Roumana was our highlight of our trip to Fes and Morocco, and we shall remember it and will come back.
