Before we booked our stay we read the 2 reviews that have been posted and they were very helpful. During our stay we thought about other bits of information that might help other travellers.
We booked a dive package with the Mango Inn and the Utila Dive Center (UDC) through Aqua Dreams travel as instructed on the Mango Inn website. My husband already knew how to dive and I signed up for an open water course. We signed up for the 2 dive a day for 6 days, 2 meals a day, lodging for 6 nights, plus my course. We found the price, $1500 USD, quite reasonable.
I would recommend doing a dive package for someone learning how to dive because there is a lot of reading to do and it's easier to just walk over to the restaurant than to walk around town searching for a good place to eat. The Mango Cafe opens for breakfast at 6:30 so you'll always be able to get a good meal before going out diving for the day. The food is good.
We chose to stay in one of the bungalows for a little more privacy. Be aware that the walls separating the 2 rooms (it's a duplex style bungalow) are there only for visual separation and you can hear Everything. Everything down to someone brushing their teeth. We were lucky and only had neighbors for 2 nights. We did have hot water issues though. There wasn't any hot water for 3 nights and the hot water heater exploded water all over the floor twice. After trying to fix it and failing they eventually moved us to another bungalow and made up for the inconvenience by lettting us stay there when we were meant to move to another, smaller, room. We also requested blankets when we first arrived and never received one. While both rooms are large and comfortable, the Copan Cabanas are much nicer than the Coco Cabanas so if you have a choice I would request the Copan Cabana. The Copan had nice blankets on the bed, pictures on the wall and a quiet air conditioner.
As for information on the UDC, I wouldn't dive with anyone else. Jason Levi is an organized, efficient, on time, nice, smart and overall great instructor. I feel lucky he was there to great me at the dock when I arrived. You will most likely be on the resort boat, Martini's Law, so you may be diving with Chico and Karen, the other 2 dive masters with whom we dove. They are both wonderfuly nice and interesting people. Karen moves through the water slowly enough for people to take photos and for new people (like me) to feel comfortable with the pace. Chico dove with my husband and he is now the head dive master as Regina (see other review) has moved to the States. He has a true love for diving and if he's still there when you travel to Utila he'll be on the boat every day.
Take the advice from the folks at the UDC for other places to eat, they always steared us in the right direction.
One thing to note if you are travelling to Utila is that if you fly directly in to Roatan you'll have to either charter a plane to Utila or take 2 ferries to get there. It's a little time consuming, but well worth it once you get there.
Utila is a small island and most of the activity is centralized in a couple square miles. After a few days you'll get to know people and be able to say hi as you walk along the streets.
