Description: Matsuhisa Aspen is nestled beneath a quaint victorian house in the mountain town of Aspen Colorado and features the cuisine of world renowned chef Nobu Matsuhisa. Japanese-inspired seafood and sushi, as well as an ultra-hip scene and lively bar crowd can best describe Matsuhisa Aspen. We are a continuation of Matsuhisa L.A., Nobu New York, Nobu London and may more locations around the world.

The restaurant is supposedly run by a super well-known Japanese chef and serves the best ever sushi. No wonder, it's almost impossible to get there. If you are dining in the main area - reservation is a must, if you are dining in the bar area - first come first serve which encourages a lot of unhealthy competition. However, the hostess was amazing - she pretty much commanded the entire place, and was very nice to us setting us up at a table in less than an hour of wait. So how was it you ask?
Pluses:
+ great appetizers and not too small
+ deserts to die for - innovative and tasty
+ patient service
Minuses:
- difficult to choose from menu - no traditional sushi or sashimi dinners, or other options you usually get at the sushi restaurants
- super frugal sushi - thinnest possible slices of fish. I guess rice was good ; )
- super crowded and loud, not a pleasant place to have a conversation with the friends
- impossible to park nearby (closest place - the underground parking area 20 min of walking)
- expensive
As a side note, if you for some reason still decide to go there, order a Japanese soda drink in a fancy glass bottle - tastes like an old style soda and the bottle is sci-fi. See for yourself.

Hipster spot. Too many cooked items for my taste. Downstairs restaurant has a BIG attitude but the upstairs is more of a locals spot.

Ate here Feb 3 2008. We did the chef’s tasting menu for $150 per person (two of us). The food was very above average and creative with distinct tastes and presentations. However, the service was fairly poor. No one approached the table for 10 minutes and the waiter was friendly but inattentive. He did manage to tell us that he lost a bit of money on the Superbowl, but needed to be reminded on most things. We asked several times for items and even asked to see the sushi menu towards the end of the tasting menu but he forgot and was ready to bring dessert and the bill. The spicy tuna we ordered was just plain tuna…no spice …We spoke to the management (Todd) who seemed to genuinely care and comped us our beverages (nice but not necessary). Overall the impression for us was that our waiter was someone who liked to ski and was very lucky to get a waiting job at a place with such a national reputation but really lacked the skills to be waiting tables where 2 people can spend almost $400!!! The dining room was very noisy as well….

The sushi is excellent, however we waited over 1 hour for our rolls. Our waiter had an attitude when we asked what the issue was. Then he dissappeared before they arrived - presumably his shift was over but didn't bother to make sure we had our food before he left!
