Hostal El Chef is without doubt the best hostel in the whole central south of Cuba. Emilio and his family welcomed us in a very nice house with a beautiful garden and from the roof there is a beautiful view over the city towards the Sierra de Escambray mountains. If you stay with Emilio, make sure you take a cocktail making class with his friends, so you can show off at home with your skills in making mojito, daiquiri and canchanchara, the local drink in Trinidad. Emilio is also a brilliant chef, and his barbecued lobster is a delicacy you do not want to miss. Service is very friendly, the rooms are very tidy and airconditioned, and you always feel at home there. One tip: stay in Hostal El Chef for at least a few days, so you have the time to venture out to the mountains end do a trip there, or go to one of the beautiful tropical beaches nearby, or to Valle de los Ingenios, the old sugar plantation area. We booked a hostel in Trinidad, but they had some issue with the bookings, so they suggested Hostel El Chef, and it was the best thing that happened to us in Cuba.
The house is greatly located, it is new and in a very good condition. People in the house are just fantastic, very friendly and helpful.
The terrace is amazing, with rocking chairs, and a nice view of banana trees garden, mountain view, etc..
The food is also excellent, good portions, and nice.
When you are there, you can ask the lady who works there to prepare a Cuban flan for you, it only costs 30 pesos (national currency), which works out at 1.25 CUC (less than 1 euro).
We really enjoyed our stay there, we even left the hotel we booked in Varadero and went back to Trinidad and stayed in the hostel el Chef!!

Room Tip: the two rooms are good.

This was the best casa we stayed in in all of Cuba! Emilio, his wife, and the woman running the hostal were so kind! They were lovely people. The room was so clean, with big fluffy towels in the bathroom (a welcome change from the scratchy tiny ones usually found in casa bathrooms), and our room opened to a lovely deck which overlooked a banana grove. It was so pretty. But the definite highlight of Hostal el Chef was dining on Emilio's succulent, spectacularly good lobster dinner. We stayed in Trinidad an extra day just to have that lobster again, and almost ordered it for breakfast!
A lovely, clean, wonderful casa! ( I only gave 4 stars for sleep quality due to the annoyingly loud rooster outside, which of course had nothing to do with the casa)
