I grew-up with W. European and Scandinavian food, and can't say I've had anything I would try again in Slavic countries. So, I was prepared for greasy, starchy and pickled dishes.
Wow, the food I had in Estonia & Latvia was the best of Northern Europe. Simple and elegant like Scandinavian, hearty with the good quality of Germany and Holland. Only the desserts were lacking.
Here is proof that cultures that have experienced the crush of being invaded can come out with identity and be proud. Now, if only the English had taken some food prep tips from it's empire, eating there would be as enjoyable as visiting it. That's my rant.
