While we were in Cayma, Arequipa Peru with some friends who were visiting with us from the US, we had to make sure they tried some Cebiche. We decided to try a local spot and give it a try. They had Cebiche in the US mexican style but never peruvian. We ordered a plate with fish (dorado) and shrimp, as well as some cilantro rise with langostino's and another plate similar with smoked oysters. (which I don't like... usually) the food took a little while to prepare, as it is made fresh to order, but WOW, easily the best Ceviche I have had in Peru! I will go back in a heart beat. everything was full of flavor, and the service was good as well. I even had 2 plates of the smoked oysters and cilantro rice.. which leads me to my last point. don't be afraid to order plates to share, they were large portions, and we felt we were in a chinese restaraunt the way we were sharing food.
