Description: The Restaurant " Redibis " is born from the awareness of a unique location and the will to save it from the obvious museum logic, in order to make it host the ancient ritual of dinner instead. We are in the Roman Theatre in Bevagna, built in the first century AD, probably under Emperor Trajan. A timeless setting along with an experimental and contemporary cuisine, able to give a gourmet experience out of the ordinary . Good food and wine are for us a passion, almost a religion. From this great love of ours "FOODIE" project was born. We've been professionals of food and wine for many years, real lovers of good food, and our purpose is to convey to all our guests the thrill of an unforgettable dinner. We are loyal to Italian traditional cuisine, but our eyes are always facing new trends, we are curious by nature and we like to experiment. At Redibis you can enjoy traditional dishes with a modern twist.

Sure didn' t expect what we found behind the cute little entrance, We decided on the Tasting Menu and for another €18 the MD chose the wine to go with the dishes. It was a delightful 5 course meal. Would recommend this restaurant to anyone, so if you are going to be nearby, you should try to get there. We had our hotel rception make a booking for us, and it would probably be wise to book ahead

The 45 euro tasting menu is based on Umbrian classics from a cookbook compiled by Maria Angeli in the early twentieth century. everything was beautifully prepared and delicious. All ingredients are sourced locally. Dishes include "Senese pork” ham with wholemeal flat bread and melon chutney; “Strappatelle” (hand-made pasta with tomato and bacon sauce flavoured with marjoram - recipe year 1935); Tournedos of pork with sweet spices, fig mustard and sage tart; and a cocoa and caramel pudding with crispy praline nuts (recipe year 1922 ). For 18 euros more, very generous wine pairings (of local vintages) are offered. This menu is highly recommended.

The setting and ambience of the restaurant is spectacular, a 2000 year old Roman theater. Definitely the oldest building we've eaten in. Wonderfully restored.

Finally, a word about our waiter, Paulo. This is a man who clearly loves his job, loves the food he is serving, loves the restaurant, and loves his town, Bevagna. After dinner, he accompanied us out to the gardens surrounding the restaurant and gave us some of the historical background of the place. He set a standard of service for us that has been rarely matched and likely will never be surpassed.

We ate here today. The restaurant is housed in the remains of a 2000 year old roman Teatro.
My friend had an onion soup with calves liver prepared Venetian style. It was amazing and totally different than anything we had before. I had a roasted tomato stuffed with spelt with a yogurt sauce. Light, tasteful and refreshing. We both had veal cheek braised in red wine with mashed potatoes made with cream and onions that were red and sweet: incredibly delicious. The meal was accompanied by a rosso de montefalco which was very good. It was worth the trip and we would eat there again. They have prix fixe and a la carte.
Each course had about 4 choices. All seductive. Service was excellent and the overall atmosphere is, beautiful and serene.

Fabulous food, fabulous wine, fabulous service, fabulous location. We had 4 dinners here and each evening was an experience filled will delight, wonderment and total satifaction (especially in the tummy department!)
