We did the full day great taste trail. Overall the day was fine and we met some good people and had some great beer/wine. I would give the experience a 3.75/5. The trail could be marked a bit better as the more "tastes" you have, the more difficult it is to follow the map and there can be a bit of distance to cover between venues. As it is a self powered/guided tour the price seems a little high as basically you are renting a bike and provided with a map. The $10 for pickup is ok but could be charged per couple (not per person). As for the bikes, they seem of good quality and are in nice shape. I would recommend getting the 21sp over the 7sp as there can be a pretty good wind coming off the water making for a bit of a difficult peddle with fewer gears.
The Breweries were great. Dick at the Lighthouse makes not only some great beer, but he is a real character and great to chat with. Stoke had some of the most interesting flavors of beers I've tasted including a smoke and coconut vanilla along with a dozen others.
Overall it is a nice way to be able to do alcohol tastings with your spouse/friends where you can both enjoy the experience without worrying about who is going to be the sober driver and you get some exercise along the way.
