I really wanted to give this hotel a 4 1/2 mark as it's not perfect and I rarely give a 5 however our enjoyment of the stay was a five. It's a large impressive property as you enter through the gates and progress up the drive towards the main building. All of the staff which we encountered were very friendly, helpful and non-intrusive. We booked a Heritage room which was clean comfortable and well appointed. The real star however is the idyllic views across the manicured lawn and down through the valley. We chose to make the most of our view by enjoying room service out on the balcony with some of the spoils of our days tour around the vineyards. As the balconies are open along the verandah you may find yourself in close proximity to your neighbors however being a Sunday night we were only accompanied by the view. The indoor pool at the property was nice but quite cold. Breakfast was a relaxed affair in a pretty conservatory with a large variety of options that should cater to most pallets -other than those that like to send things back because it isn't gold plated. I would definitely return to the Sebel in the future for a relaxed getaway with either friends or for a romantic escape.

Room Tip: Ensure you book a room with a view - It will make your stay.

My boyfriend and I drove to Hunter Valley for the weekend and stayed here for one night. We had a lovely stay here. Here are pros and cons during our stay -

PROS
- Spacious and clean rooms
- Quiet and relaxing location
- Gorgeous view of the vineyards
- Polite staff
- Each room has a veranda
- Great for romantic getaways

CONS
- When we stayed there, it rained and there were a lot of frogs in the area. I don't blame the hotel for this because I know it's just part of nature.

We just spent two night at this lovely hotel. The staff were extremely friendly and helpful. We ate at the restaurant the first night and the food was amazing, so rather then drive somewhere else we dined there the next night, great chef. We had a lovely room on the west wing overlooking the beautiful valley. Would defiantly come back.

I stayed here with my husband for couple of nights so we could explore the local wineries. It's well located, close to many vineyards and a short drive to some decent places to eat. Every member of staff we encountered was very friendly and helpful.The room was decent enough with a lovely terrace looking out over the valley - it really was a great view. It's been mentioned that the balconies aren't very private but this didn't really affect us. I think the rooms and bathrooms are due for a big overhaul, whilst everywhere seemed clean and tidy, it all just felt a bit old. I turned the sink tap on and lots of black water came out of the bottom of the tap - not good. The grounds are very pretty though and the indoor pool is OK for a quick dip.

We ate a couple of times at the hotel and it was really very average. Breakfast was no better or no worse than you would expect for a hotel like this but the restaurant markets itself as a fine dining experience however it fell someway short of this. There was a nice atmosphere in the dining room and the service was friendly and helpful but the food just wasn't that interesting. My steak was over-cooked but I was too hungry to send it back and wait for a replacement meal.

Completely free and reliable wifi in the room was an unexpected bonus as Australian hotels tend to charge ridiculous amounts by the hour or confine free usage to the lobby areas.

I only paid around AUD$110 per night so I was more than happy with our experience for that price and I would still recommend this hotel if you can get it for a similar price.

Good position for visiting wineries clean quite nice restaurant.We also did the helicopter ride over the wineries and that was very interesting information on the ride as far as the history on some of the wineries. We also went to the hunter valley gardens and i highly recommend them absolutely fantastic.

Chose the Sebel for its location which is near Cessnock as well as all the main wineries. Good property but you need to have a car. Clean with decent service. Only issue I might have is that the bed was a bit lumpy!
