We've eaten here twice and probably enjoyed ourselves more the first time which could be due to the novelty factor. The food is very original, wine list is great and service impeccable. I love that it's such a small restaurant. We booked online and this was very easy, I needed to reschedule and did this via email which was convenient. We made a couple off additional requests during our meal and these were graciously accommodated. Subo is unpretentious and it's great to have this restaurant in Newcastle.
We've been lucky enough to eat at some great restaurants in Australian capital cities and across the world and this one is right up there.

Sunday lunch with the girls. Service great, food mostly fantastic - the artichoke soup was a little sweet and strange but venison with pinenut mayo starter and berry/pistachio cake/liquorice dessert were very very good. The sister's choice of some sort of encrusted fish with parmesan chips and mushed up peas looked the best (main). Anyway, an overall really really good experience. I love the smallness of the place (not so keen on the location but it won't put me off). This place is a step up for Newie and one that is sorely needed in my opinion. I booked 2 weeks in advance and had no problem with availability and booking online. Go there!!! Oh and have an espresso martini with the good vodka - superb.

Busy, but the staff are friendly, the food is delicious and the atmosphere is great. Everyone seems happy and relaxed. Both my partner and I really enjoyed ourselves.

Last Saturday we dined at Subo and had the 5 course tasting menu. Had heard about the chef.
The chef is Beau Vincent, He's worked with Guillaume Brahimi, Warren Turnbull and Tetsuya Wakuda, This is the tasting menu
FOSTERTON FARM SOURDOUGH
house churned caramelised garlic butter
CEVICHE OF CRYSTAL BAY PRAWNS
sea succulents, sea lettuce, rye, foie gras & ponzu
GOLDEN PLAINS PORK SHOULDER FINISHED IN PANKO
kimchi puree, quick pickled cucumber & house made lobster cracker
CAPE GRIM SCOTCH FILLET
barbequed and served medium
charred eggplant and miso puree, buttered daikon & locally foraged samphire
PRE-DESSERT
PEANUT BUTTER ICECREAM
chocolate and stout cake and crumbs, chocolate mousse & puffed rice brittle

Just as Tetsuya serves a fusion of French and Japanese, Subo serves a fusion of Modern Australian, Japanese and Korean.
The food was fantastic , especially the entree of CEVICHE OF CRYSTAL BAY PRAWNS
Subo is a 1 hatter restaurant, we also visited Masons also a 1 hatter, Subo is much better and cheaper.
Although It is a very small restaurants we booked for 7.45pm and had to leave in 2 hours, but there was no booking for 9.45pm so we could have stayed all night.
They allowed us to take 2 bottles of Grange and corkage was $20.00 per bottle.
Next time you are up there try it out.

Great that you can book online. Service a little slow but overall a wonderful experience. If just 2 of you it's very crammed.
