Must Have the Chicken Wings & Carrot Tart!!! Beef Just Devine!!! Proffesional Friendly Experience 10 Plus!!!!!!!!!! Have Been Many Times Had the degustation menu Once Was Fantastic! perfect in every way, If ever in Newcastle, do yourself a favour and go to this newly hatted restaurant while you can, soon you will have to book months in advance, trust me, get in quick !!!!!! U can Never Get board With the Subo Menu as it is Always Changing!!!!!! Enjoy!!!!

I had a meal at Subo recently. I have tosay it was a wonderful experience. The staff were very helpfuland so friendly. The food was most enjoyable.

The whole experience was just wonderful and I would not hesitate to go there again and I would recommend anyone to go and have a great experience.

We are locals but had trouble finding Subo. It was tucked away in a quiet part of Hunter St. However we are so glad we did! The food, atmosphere, service - in fact everything was amazing. We took our 16 year old daughter and had the degustation menu. It is without a doubt the best restaurant in Newcastle. We would not hesitate to go back.

My girlfriend at the time and I headed to Newie for a meal on a Sunday morning, she consulted Tripadviser on her phone as I drove, she rattled off a list of names and we made up a short list and settled on Subo !
Thank the culinary gods we did, no reservation, short notice, spur of the moment and we were welcomed like visiting royalty, from the moment you walk in that amazing front door you know it is going to be great!
The decor is amazing, right down to the shot glasses with a single nastersion shoot in them, beautiful simple and clean!
We had the tasting menu, every single mouthful was a revelation, perfect in every way, the food here is faultless !

If ever in Newcastle, do yourself a favour and go to this newly hatted restaurant while you can, soon you will have to book months in advance, trust me, get in quick !!!!!!

As the recently hatted, much hyped, buzz restaurant in town we arrived with great expectations of Subo.

Initial impressions were impressive. A small, intimate dining space and outstanding service. Personable, knowledgeable and engaging. We overheard a waiter remark "I love my job" and it clearly shows that they do.

Our tasting menu started with a very smart prawn ceviche with perfectly balanced layers of flavour. The ginger and foie gras work together very well .

The deboned crispy chicken wing on blackened corn is tasty, though seemed a little simple.

Following it with a caramelised lamb rib doesn't quite work. The flavour of the crispy skin is too similar to the chicken and quite rich and fatty. The accompanying pea juice and lettuce isn't enough to balance the dish out. Nothing wrong with cheap cuts of protein done cleverly, but back to back was stretching our palate. Having said that, the pre-dessert of mulled wine sorbet and buttermilk granita was an excellent refresher.

As the restaurant filled the intimate atmosphere unfortunately evaporated. A table of 6 dominated the room and we found ourselves competing in a shouting match to be heard over them when they weren't eating.

Dessert of berry salad and 30 second sponge with licorice ice cream was pleasant but safe.

Despite some negatives, throughout the meal we kept reminding ourselves that we were only paying $70 a head for 4 courses at a hatted restaurant. Whether the hat is deserved or not is irrelevant - $70 a head is very good value for the meal we had, particularly when BYO is allowed for special bottles.

Our high expectations weren't quite met, but right now we're holding the critics and dining public more responsible for that than the owners. They're delivering a very good value dining experience that we look forward to returning for.

Thank you for your considered and very fair review.

The kitchen have acknowleged your feedback and are looking forward to improving our menu after your comments.

Unfortunately, and especially in a space as small as ours, it can be problematic limiting the amount of noise that other diners make - let us know they are too loud and we will do our best to calm them down.

And while we have been very fortunate so far, we always try to remember is that hats and accolades can be taken away as easily as they are given.

Our main aim is to provide tasty, fresh, and interesting good value food in a relaxed environment, and we very much appreciate that you understand that this is the product we deliver.
