Magnificent food. Wine list is extensive, with glasses in tasting & normal sizes. Looking forward to returning.

We were interstate visitors wanting to try this hyped up establishment with friends from Hobart.
Friends were advised that we ccouldn't make a booking but that we should arrive early and wait in the qeue.
We (4) arrived before 7.30pm Saturday evening to be told that there were no tables available and that the resraurant was booked out! Apparently you are able to phone in earlier in the day that you wish to dine and put your name on the booking list!! The booking you make when you can't make a booking!
It would also appear that it may be possible to receive preferential placement on the list if the "non-booking" is made from Garagistes assocciated property Side Car!!

Garagistes has been hyped up since it started a few years back - it is frequently written up in the top culinary articles/publications in Australia.

No bookings makes it a bit hard to plan, but managed to get a table on a Wednesday night.

The options are 3 or 5 course degustation - we went for the 5 course, although the course specific dishes took my fancy a bit more (by name at least).

The most mind blowing course was essentially mashed potato (but the most amazing mash I have ever had) with prunes, black garlic and dehydrated olive. It was dish of the year for me, beating a lot of 3 hat restaurant dishes in Sydney and Melbourne. Wow.

The other dishes were interesting - warm sea greens being the weirdest of the lot but delicious.

The alcohol list was awesome, with the Lebanese beer being the pick (simply amazing, has sumac and alot of other spices in it). Very big on their orange wines here (white grapes left with skin on during production - amazing flavour).

Service was a little lacking by my primary server (just didn't seem to care much, didn't explain some of the courses, didn't explain any of the wines at all) but that was fixed when the waiter changed over to another guy who seemed to really know his wines which made my day.

Overall, Garagistes is a must if you are in Hobart; it is absolutely fabulous.

This eclectic restaurant was recommended to my husband and me by a Hobart native while we waited together on a street corner. We luckily got there just after it opened on a Thursday evening, which was a good thing because there was a long line shortly after we arrived. The two of us were seated across from each other at a long communal table between two parties of 4. Service was efficient, knowledgeable, and friendly. Each of the menu selections were uniquely creative, freshly prepared from local ingredients, and sounded intriguing and delicious. We ended up trying as many as our budget would allow, and then some (see photos)! While there we struck up conversations with some of our table-mates, adding immensely to the whole experience. Garagistes was definitely a gastronomic highlight of our 3-week Australian adventure.

I was a bit nervous about coming here. The much written about long waits. The strange, challenging food. Lots of hype.

At 7:15 on a Friday night our party of six were seated without a wait! Quick service with water which was followed through with professional, friendly and helpful attention by our waiter. We had the 5 course menu and agree with other correspondents on the size of the dishes and the stunning highlight of the savoury desert. The matching wines were also well introduced and paired perfectly.

The downside remains the shared tables. For the price, I'd prefer a little more privacy. The decor is grim. And what is the story about 95% European wines on their very extensive list. Very dodgy, as who would (a) know the value (b) remember what they drank? There is absolutely no excuse for this appalling lack of faith in the local product when this is all they rave about in the food department.

I understand that this is cutting edge dining and the food was certainly interesting but I think you get more bang for your culinary buck with a night out at Me Wah in Sandy Bay. Similar pricing but added elegance. If you are in Hobart you have to try it once. But that's it.
