There are some restaurants that when you get the bill you wonder what you paid for. Not Aria. You do have the usual minimalist approach to fine dining pursued here too but the richness and quality of the food ensure only the taste is rembered.
My menu for the night twice cooked sweet pork belly with green tomato, jalapeño and celery salad followed by Cedar wrapped Bass Grouper fillet with prawns, daikon and a bourbon and mustard glaze with Steamed broccolini with almonds and Truffle mash completed with a Black Forest chocolate délice with mascarpone sorbet, cherries and chocolate jelly accompanied by a few glasses of 2006 Giaconda Shiraz from the Warner Vineyard Beechworth.
