“World class...”

Compared to the pallid Tetsuya's, Marque is an explosion of flavour and excitement - innovation married to exceptional technique.

It should be noted that the restaurant space is not particularly exciting - while the decor is nice, it won't be winning any design awards. Understated is probably the appropriate word. There are no views (except glimpses of a rather boring stretch of Crown Street, Surry Hills.

But Marque is not about the room or the views - it's all about the service and the food.

The service is wonderful - unobtrusive, knowledgeable and genuinely friendly.

The food is truly exceptional. Mark Best's cooking is exciting and often challenging, using odd combinations of ingredients. However, his technique is not simply shoving odd ingredients together and hoping that they work, in order to look cutting edge... rather, every disparate element has been thought through carefully, and somehow they merge together into amazing flavour combinations...

On the degustation menu, the standouts for me are usually the almond jelly with crab, the ham with parmesan custard, and whatever cheese dish there is (always exciting cheese with interesting accompaniments).....

Desserts are always spectacular...

The matching wines in the degustation are always exciting and different - again often pairing unusual wines (or other drinks) with unexpected food.....

One note - as the food is often about big flavours, I am not sure if the menu works as well as an a la carte experience.... it really seems to be designed to work best as a degustation menu...

Just go, and eat whatever they want to feed you... you won't be disappointed.

“It's the Best”

Marque is probably our favourite restaurant in Sydney - easily as good as Michelin ** and *** places we have visited in Paris but half the price. Probably less, given the $AU's exchange rate with the euro.

No harbour views - just a small, quietly elegant dining space where chef Mark Best delivers exemplary service and clever, complex, carefully crafted flavour combinations - which, in less safe hands, probably wouldn't work. Like suckling pig with confit of eschallots, coffee and caramelised yogurt. Or venison with carrot confit, sweet and sour turnips and bitter chocolate.

The degustation menu, perfectly matched with the flight of wine, is a revelation. Best of all, it saves you from having to choose from the carte.....
