This restaurant almost goes unnoticed from the street. However inside it is subtle and intimate - ideal for a special night. We had the degustation menu - all the dishes were standouts and executed skillfully. Some challenged the palate eg.dutch cream potato with bone marrow, sea urchin & coffee. Others were just straight out delicious such as hot crab custard served with snap frozen grated foi gras! All courses were served with matching wines by the friendly waiting staff immaculately dressed in black. Chef Marc Best's unusual and innovative cuisine is never boring and always tantalises! We left feeling great and wanting more!!

At least once a year my wife and I visit a top-ten rated restaurant in Sydney with friends that we've known for over 40 years. My wife is a Cordon-Bleu chef (now retired) and has had experience in 3 Australian cities as well as Indonesia, Canada and Greece. In 2011 it was Marque's turn. The venue is an unpretentious space in Crown Street, Surry Hills, almost unnoticeable from the street. Inside it's very quiet; the tables are spaced well apart and there aren't a lot of them. There seems to be an abundance of staff and our waiter was top-notch; knew the menu (and how each dish was prepared) fluently. The sommelier was superb; absolutely at the top of the game. We went for the degustation menu: 10 courses plus an optional "Carles Roquefort, Beetroot, Guava, Rose & Raspberries" dish. Each dish was matched to a wine chosen by the sommelier and he did a perfect job. The welcome wine was a glass of Moet and Chandon champagne which gives you and idea of the standard. The meal was so sublime it's hard to choose a stand-out dish; possibly the "Coral Trout with Fermented Vegetables, Sprouts & Caramelised Goats Curd" matched with Equipo Navazos 'La Bota n.22' Manzanilla, Andalusia, Spain because it's unusual to match a course mid-meal with a sherry, but it worked. Anyway, the experience was brilliant, and cost just over $1,100 for the four of us (which is why we only eat at this level once or twice a year!). There's plenty of diners willing to pay the price; we had to book three months in advance to get a table for four.

Western food is always new to oriental people. However, Marque didn't let us down. My families spent 2 and half hours with this beautiful crew. We enjoyed a lot! The reason visiting Marque is not only make ourselves full, but also tasting Chef Mark's creation and talent! I definitely suggest you to give a conversation with their sommelier because they are fantastic. We had 8 courses set menu which including foie gras, truffle, wagyu beef, etc. The wine selection is also good. It may be difficult to find a parking place, however, it is still worthy giving a try. Cheers.

We've only been to Marque a couple of times, but thoroughly enjoyed the experience each time. Food is exquisite - wines are good (but as usual for a restaurant like this, overpriced), and service is discreet and efficient.

We went to Marque with high expectations. Our friends had already eaten there (a la carte) and thought it was wonderful. When they booked, they were not told that we would only be offered a degustation, and that there was no menu. One of our friends was appalled that she could have so little choice over the food for which she was paying quite a lot of dollars. The rest of us were cheerfully prepared to see what arrived on our plates, but only 2 of the 10 (I think) offerings were actually delicious. Some of the flavour combinations really did not work, and we all found one of them revolting. We were left with the impression that this restaurant was all about the chef's originality and innovative imagination rather than pleasing the clientele with an excellent dining experience. Marque was truly memorable, but not for the right reasons.
