We have taken the ferry to Watson's Bay, which is quite relaxing, particularly if it stops at some of the 'ports' along the way, Double Bay, Rose Bay etc.
There is actually not much to do once you are there other than walk over to the cliffs at the harbor entrance and watch the surf or have a drink at the pub or a meal at the restaurant/s. Doyles is a well-known seafood restaurant, but is expensive. There is a casual/takeaway branch of Doyles if all you want is fish and chips.
For the energetic, the walk along the eastern coastal cliffs to the Lighthouse is pleasant on a nice calm day.
An alternative for the return trip back to Sydney CBD is to take the bus, via Bondi Beach.
