We're been wanting to visit est for quite a while and decided to go for a special Christmas Eve dinner. The setting is lovely, yet somewhat formal for Sydney. The pre-dinner champagne cart was an unexpected treat for a special outing. Service was pleasant and professional. We were a bit surprised not to be served an amuse bouche, which seems to be the norm at every other high-end restaurant we've visited. The superb game consomme with foie gras raviloi was the highlight of the meal, followed closely by the seared scallop with foie gras cream, the quail, and the venison. Not surprisingly for a holiday eve, the dining room seemed to be filled with hotel guests rather than locals, and those sitting closest to us were more interested in taking photos, checking themselves out in the mirror, and talking on their smartphones. This was a disappointing distraction to an otherwise fine dining experience, especially because we have never encountered this behavior in other top Sydney restaurants.
