A few tweaks and this place could be very good indeed.
Loved: the town centre location, easy walk from the station, good parking, friendly staff, comfortable beds, not expensive, quiet rooms overlooking the courtyard, no traffic noise.
Not so keen on: no extra blankets in the room on a cold night, no hairdrier, noisy fridge in the room we had to unplug immediatley. Also the evening meal was disappointing, just very standard pub grub. However, Ware seems to have more restaurants per square foot than any other town, so being right in the town centre, you'll be spoilt for choice.
This is a lovely building, full of character, very clean and comfortable, with easy going and friendly staff. It needs a few more thoughtful touches, but is overall good value for money, and yes, I'd stay there again.
