Description: California is a melting pot of cultures and nationalities. A mix that has translated into a kitchen that brings together the best of all worlds. Californian cuisine is therefore one of the most diverse in the world. Elements of classical cuisine and Californian cuisine are brought together with the natural flavors of known and lesser known ingredients and diverse cooking techniques. The kitchen, California Inspired Cuisine is a unique and very personal cuisine brings a combination of fresh produce, classic techniques, Californian & Asian influences, based on the background of the Chef and his inspiration of the moment. There is no menu. The often surprising dishes from the inventive cuisine are light, fresh, creative and balanced. Heavy, rich sauces, the excessive richeness, or even the sometimes distinctive overcooking were omitted. Healthy eating is key. Already since 2009 there has been a persistent drive to continue this trend into the future, this urge without unnecessary and constantly refer to the period in the States. This results in an even more varied results on plate and in the glass, which ultimately is also the intention.

Always surprising mix of flavours, often combining typical Flemish ingredients with exotic recipes. My favourite address in the region of Gent.

“Fantastic experience”
5 of 5 bubbles Reviewed December 3, 2012

Not only in the city centre of Ghent you can find modern fusion cuisine with surprising combinations and very tasty dishes. Lotus root is an overall experience. Not only the food but also the service and the wines are on a very high level. It's not cheap but it's worth it!

“Out of this world gourmet journey”
5 of 5 bubbles Reviewed July 4, 2012

Lotus Root is a relatively small and unassuming restaurant, and a huge surprise in this little town. We dined there on a Sunday evening, and were the only table that evening. Although this can be an odd experience in certain restaurants, it wasn't here - instead, we received the most incredible wine and food journey from Caroline Buensalido, one of the owners, and thus unforgettable service!
The wine list is fascinating, with a wide array of Californian wines. Caroline is an expert - knowledgeable but playful. We learnt a good deal in this one evening, and tasted some outstanding wines, perfectly paired with our dishes.
We chose a 4 course menu (menus change seasonally), which ultimately was interspersed with tantalizing mini dishes and palate refreshers. Literally each course was a delight for the senses, but even the so-called simplest side dishes, like a purée of potato with lemon zest, were memorable.
It certainly made no difference to the Lotus Root team that they were only serving two people that evening - we still received 100% perfection in food, wine and service. In fact, I consider that we may have received more...!
If you love extraordinary food and wine, and thorough, caring service, then I highly recommend that you reserve a table at Lotus Root now!
