The chef used to have a 1 star Michelin establishment in Champery, I believe.
The cuisine is top-notch. Don't let the casual surroundings foll you. The food and presentation are as good as you will find in Villars. I have eaten at least 5 dinners in the past year or so at the Alpe Fleurie, and each one has been as good as the last. The menu is part Swiss, part Escoffier, and part Savoyard. Sort of a blend of the best of the region, with some interesting original thought added to the mix.
The staff is helpful and attentive, and while the atmosphere is certainly informal, they are gracious and warm, and eager to please. For anyone seeking a great dinner in Villars, this would have to be one of my very top recommendations.
