Tom & Laure have created something unique in the small Swiss town of Nyon, on the shore of Lac Leman between Geneva and Lausanne. Previously an up-market Italian restaurant, they have transformed it into a trendy eatery serving innovative variations on classic dishes. Tom - the owner and chef - has travelled the world and this is reflected in his cuisine. Soft shelled crab tempura, English fish and chips with a puré of minted peas, delicious cod flakes with a lightly-spiced dusting of crispy pan-fried batter are just some of the original fusion-style ideas emanating from the kitchen.
Whilst not for the budget diner, a three course luncheon menu (which can be taken as individual dishes) is just over CHF 40, and there are a selection of wines by the glass that start at less than CHF 6. The tables are reasonably close, in French bistro style, but this adds to the atmosphere, with the table service seamlessly handled by efficient staff, overseen by Laure, Tom's wife.
