We arrived in Viterbo from Rome on after a two hour "milk run" . The cost was only 5 Euros one way to Viterbo. We looked for a nice restaurant and were recommended Al Vecchio Orologio. It was a good choice. The interior is well appointed and the staff was welcoming and hospitable. I chose ravolio covered with cheese and walnuts, and my wife had egg plant parmagiano, Both were delicious and were very hot. We also had an antipasta, which was a sampling of all the local products. Cheeses, tempura like vegetables, soft breads, proscuttio, etc. It was another good selection. We had 1/2 litre of local white wine and it was also very good. We were so full, we avoided dessert. The bill came to 35 Euros. What made this restaurant special was that it used as many local products as possible.
