We own a vacation home in Spoleto and are familiar with all the restaurants here. Cantina De Corvi changed hands last year and is now one of the best in this city! Many great typical Umbrian rustic cuisine places, but hardly any that put some sophistication and originality into the standard fares. Corvi does this exquisitely. Their pea and mint ravioli is to die for, and you must try their delicate cod dish. They also spruced up their lovely outdoor seating area, and the inside with the ancient exposed arched stone ceiling has our favorite ambience when we visit during cold weather seasons. There is a lovely friendly waitress who speaks excellent English for those of you who are cowed by the relative dearth of Anglophiles in Spoleto. The prices are about the same as any restaurant in Spoleto - we are always surprised there is barely any difference in price from the most casual to the most elegant establishments for the same dishes. If you have only 2 or 3 meals out in Spoleto, this should definitely be one of your stops.
