We own a vacation home in Spoleto and are familiar with all the restaurants here. Cantina De Corvi changed hands last year and is now one of the best in this city! Many great typical Umbrian rustic cuisine places, but hardly any that put some sophistication and originality into the standard fares. Corvi does this exquisitely. Their pea and mint ravioli is to die for, and you must try their delicate cod dish. They also spruced up their lovely outdoor seating area, and the inside with the ancient exposed arched stone ceiling has our favorite ambience when we visit during cold weather seasons. There is a lovely friendly waitress who speaks excellent English for those of you who are cowed by the relative dearth of Anglophiles in Spoleto. The prices are about the same as any restaurant in Spoleto - we are always surprised there is barely any difference in price from the most casual to the most elegant establishments for the same dishes. If you have only 2 or 3 meals out in Spoleto, this should definitely be one of your stops.

It's not often that we return to restaurants when there are just so many good options to choose from but we couldn't pass up the chance to eat on two occasions at Cantina de' Corvi. Service was efficient and friendly and sitting out on the tiny terrace was a delight. Inside was a cosy arched brick room which would be great on a cooler evening too. The food is inventive and absolutely delicious, we ordered the Potato & Beet Gnocchi with Rabbit Ragu which was sensational, the steak was perfectly cooked and the sliced pork neck was heavenly. It's not in the most picturesque of locations, a bit hidden away but well worth seeking out. I didn't think it was any more expensive than other quality restaurants in Spoleto.

We had eight days of eating at Spoleto restaurants, and this was the best meal. It was also probably the most expensive - about 80 Euro for two, including a half-bottle of an excellent local wine - this seemed very reasonable for the quality of the meals and experience.
There is a leafy outdoor area and an old, arched stone interior - both very pleasant. Service was friendly and efficient. It's relaxed rather than stuffy and formal.
What sets this place apart from other good food in Umbria (of which there is plenty!) is the inventiveness and ambition of the chef. The menu apparently changes regularly, and there will be some interesting combinations and techniques on offer.

We had a wonderful relaxed meal on yet another lovely Italian evening in the beautiful town of Spoleto. Excellent food served by the friendliest staff who didn't make us feel awkward with our very bad attempts at the Italian language! Would thoroughly recommend it

Others have said it already and I heartily concur. This is such a wonderful restaurant. Sara and Francesco have the absolute right idea about how to run a restaurant and I wish them great success. The food was superb and they change the menu from time to time, offering up new flavor and texture combinations of their creation. My friend and I shared an antipasti salad of squid, shrimp, and avocado and followed it with a main course (we both chose the same one) or ravioli with a pureed pea and mint filling, topped with pecorino cheese and bacon shreds. Both dishes were outstanding, light, and delicate. The homemade ravioli was absolutely divine and the flavor combination of the filling, cheese, and bacon was unique and delightful. Owners Sara and Francesco (he is the talented young chef, she serves the guests) are welcoming, warm, and just genuinely charming people. I can't use enough superlatives to describe what a find Cantina de Corvi is. When in Spoleto, do yourself a favor...seek out this lovely restaurant and give yourself a most memorable experience!
