Down a side street and above a cinema hides a a very special restaurant with views across the rooftops. The food is exquisite, the service is impeccable and is a must if you enjoy a special treat. We had the pork ( slow cooked for 10 hours - luckily before you get there!) and a tempura style fried vegetable side dish cooked specially for us. The desserts were also outstanding. Well worth the money.

I have just returned from 8 wonderful days in the Tuscany and Umbria regions in Italy. Certainly a highlight of our group trip was a visit to this incredible, progressive restaurant in the ancient town of Pistoia. We were treated like royalty with great wines, fabulous food and multiple courses of traditional Italian food prepared in a very contemporary manner.

Walk out onto the balcony of this obviously well appointed loft restaurant and look out over the town, flickering lights and traffic below. Is there anything more sexy than being in a private space and extracted from the hustle and bustle of the rest of the world? It's like you have a little secret from all those not in the room.

The food was presented and served with obvious and impeccable attention to detail. Servers timed plate dropping in pairs, placed upon beautiful Italian linen draped tables. And while the course structure and components of each course might have been traditional, this was not typical to my interpretation of 'classic' Italian fare.

We began our meal with baccala. The traditional salt cod dish was served upon a bed of polenta, perhaps seasoned with roasted red peppers, giving it a pinkish hue, then topped with sauteed spinach dressed with sesame seeds.

Next, the battered and fried zucchini, eggplant and onions were perfectly seasoned.

The pasta course was fabulous, with the largest tubular pasta I have ever seen, cooked perfectly Al dente, sprinkled with crispy bits of pork sausage and draped with a silky and brilliantly green sauce made from pureed beet greens. The dish was garnished with a small portion of fresh pork sausage.

I adored the steak entree, but at this moment I am afraid I may have indulged with a bit too much wine, because I can not remember the steak's accompaniment. Whatever it was, I ate every bite.

We reached the sweet course, and I must say that it was equally surprising and delicious as the many plates before it. I asked Edwardo what could possibly be in this indulgent confection and he replied (in much better English than the Italian I struggled with on this trip) that the dish was a mixture of yogurt, coconut and cream cheese. The airy mixture was atop a thin, pastry crust and served with a mango ice. Unbelievable.

When I find myself in Pistoia again - and I will - I will definitely return. Bravisimo!
