We have visited Brasserie Guillame at least 30 times over the years. The service level used to be really bad but has improved significantly the last year or two. The increase in service level could be due to the friendly and very efficient woman who seems to be head of the waiters? The seafood dishes is excellent and the oysters are marvelous. They also serve one of the best carpaccios in town regardless of which option you choose. The crémant of Alice Hartmann is worth tasting for foreign visitors.
