Description: Michael's, a refuge offering cuisine of the land and from the sea and fusing together the traditional and the cutting edge, is fittingly housed in this very building in Valletta, a historic city also at the nexus of tradition and the brand new, yet, in perfect harmony. The same effect is sought after at Michael's. Father and son chefs Michael and Daniel Cauchi bring different experiences and opinions to the table, serving up harmonious dishes of blends of Mediterranean flavours. Chef Michael Cauchi is highly regarded locally. His famed restaurant 'Il Re Del Pesce' is still spoken of in revered tones in foodie circles, and he has served his fare to many a dignitary, including Presidents and Prime Ministers of Malta and Italy, celebrities such as Madonna, Sir Roger Moore, and celebrity chef Ainsley Harriot. Michael's cooking is delicate, respectful of tradition, and above all, based on the highest quality ingredients. Additionally Michael is a firm believer that his culinary skills are best used when they blend Mediterranean flavours into easily digestible dishes that are as kind to your waistline as they are to your palate. Lean, clean, and utterly delicious are the rules here at Michael's. On the other hand, Michael's son Daniel brings his own opinions and techniques forth, fuelled by his love for modern and fusion cuisine, yes still respectful of the traditional tastes his father is known and loved for. As to the building, it's a veritable treasure trove of history. It's known as the L'Hostel De Verdelin, after Fra Jean Jacques De Verdelin, a nephew of Grandmaster De Verdalle, took 12 years to construct, and apart from two coats of arms removed from the facade by Napoleon Bonaparte's troops in 1798, is excellently preserved in all respects. We like to think that De Verdelin, a man of excellent taste, would greatly appreciate the fine cuisine we create at Michael's, and we aspire to breathe new life into the noble culinary tradition that must have once existed in this home. Come in, and bite into tasty tradition and zesty contemporary fare!

We thoroughly enjoyed this restaurant. It's in a lovely building and the ambiance is calm, welcoming and professional.

I had the fish ravioli starter then we had mains of swordfish and stuffed saddle of rabbit. The rabbit dish was lovely. Pud was pear and almond tart with ice cream. Service was relatively slow but not a problem. We could see the food being cooked to order in the open plan kitchen and it was well worth the wait.

We chatted to Mchael a couple of times and he told us that he is introducing a degustation menu shortly.

For food and service this was probably the best restaurant we found in Valletta.

My family and I were on a short visit to Valletta on the island of Malta and wanted to have a great fish meal. Chef Michael filled the bill in his elegant restaurant, housed in a 300-year-old mansion once owned by Knights of St. John. The shared starters (smoked duck and smoked salmon) were wonderful, as were the moist sea bass and other fresh fish entrees (all expertly boned) and side dishes. The Chef was gracious in complying with the diners who wanted a gluten-free meal and made himself available for discussing various aspects of his career and current restaurant. This definitely is a place for diners looking for a well-prepared dinner at a fair price.

We found this restaurant by chance and were taken to the table and asked if we wouldn't mind waiting as we hadn't booked.

We were quite happy to do this but as it turned out we were not kept waiting any longer than other restaurants. The service was impeccable and the old building was very atmospheric.

The food was perfectly cooked, two of us had the steak and one the pasta.

The desserts were beautiful, the crème brûlée was heavenly.

Overall a wonderful experience and we would definitely recommend eating here.

We went to this restaurant on the off chance we would get a table as I had read the reviews. The restaurant is absolutely beautiful set in a lovely building and the atmosphere is warm and welcoming the staff are very friendly and they give top class service.

The food that we had was so disappointing as we had high expectation, I had the calamari which was ok but was on the chewy side and my husband had the soup for starters then for main I had the sea bass which again was ok and my husband had the steak which he said was very dry we were both very disappointed with this restaurant hopefully they were just having a bad night as the table across the way sent there steak back trouble with my husband and myself we don't like to complain.

The location and setting of the restaurant, the old civil service club just of St George's Square, are two of the restaurant's attractions. The food is also good, with well thought out re workings of Maltese dishes. The staff were attentive and prices very fair. We tried a few other places, nearby and elsewhere in the city, but returned to Michael's for our final meal at the end of an excellent trip to Valetta. Bizarrely on our last visit, Brian May was in concert in front of the restaurant, not that we were disturbed inside, and a few doors away is "The Pub" the final haunt of Oliver Reid. I would recommend a trip to this vibrant improving city and dinner at Michael's.
