Description: Michael's, a refuge offering cuisine of the land and from the sea and fusing together the traditional and the cutting edge, is fittingly housed in this very building in Valletta, a historic city also at the nexus of tradition and the brand new, yet, in perfect harmony. The same effect is sought after at Michael's. Father and son chefs Michael and Daniel Cauchi bring different experiences and opinions to the table, serving up harmonious dishes of blends of Mediterranean flavours. Chef Michael Cauchi is highly regarded locally. His famed restaurant 'Il Re Del Pesce' is still spoken of in revered tones in foodie circles, and he has served his fare to many a dignitary, including Presidents and Prime Ministers of Malta and Italy, celebrities such as Madonna, Sir Roger Moore, and celebrity chef Ainsley Harriot. Michael's cooking is delicate, respectful of tradition, and above all, based on the highest quality ingredients. Additionally Michael is a firm believer that his culinary skills are best used when they blend Mediterranean flavours into easily digestible dishes that are as kind to your waistline as they are to your palate. Lean, clean, and utterly delicious are the rules here at Michael's. On the other hand, Michael's son Daniel brings his own opinions and techniques forth, fuelled by his love for modern and fusion cuisine, yes still respectful of the traditional tastes his father is known and loved for. As to the building, it's a veritable treasure trove of history. It's known as the L'Hostel De Verdelin, after Fra Jean Jacques De Verdelin, a nephew of Grandmaster De Verdalle, took 12 years to construct, and apart from two coats of arms removed from the facade by Napoleon Bonaparte's troops in 1798, is excellently preserved in all respects. We like to think that De Verdelin, a man of excellent taste, would greatly appreciate the fine cuisine we create at Michael's, and we aspire to breathe new life into the noble culinary tradition that must have once existed in this home. “Perfection!”

Based on Michael's fame and experience and the No.1 spot on TripAdvisor, our expectations for this dinner were dangerously high; but we were not disappointed, not in the least.

The evening turned out perfectly in every aspect - the ambience, the food, the wine, the service ... Michael has a very nice way of making you feel at home in what is quite a daunting majestic building; the food was absolutely delicious, accompanied perfectly by the recommended wine; the serving staff very helpful and professional in their approach.

Words cannot really describe our evening, one simply has to have this ultimate dining experience.

“Superb food and impeccable service”

Would recommend anyone to go here, one of the best restaurants in Valletta! Only downside was the desert, however the quality of deserts overall in restaurants in Valletta was disappointing (tried 5 of the best rated restaurants and all weren't very good) Perhaps a personal choice but a lot of the deserts were stodgy and most of the time made of ricotta!

“An enjoyable excellent Lunch again”

It was Easter 2013 when I first visited and reviewed this restaurant. Last year Michael had just opened this place and Easter 2014 lunch was even better. Whenever I visit I always tend to start with the fish ravioli and the fresh fish was perfectly cooked. The rib eye that my son and my father took was cooked to perfection! My fussy daughter loved her pasta. The sweets to die for. Service was excellent in all aspects. Michael as usual making sure all his patrons are happy! Well done to the Cauchi family and the staff.

“Good and very different”

We were at Michael's in the middle of the week, having failed to get a table the previous night. It is a very different location in Valletta, a high ceiling and modern style compared to the more typical Trattoria establishments we went to on other nights.
I had a calamari goujon starter, which I felt was a bit "plonked" in presentation and quite a large portion by our standards. My wife had a raw fish carpaccio, which was delicious but again a large opening portion. We shared a 1/2 bottle of Maltese wine. We followed with my wife having a curried sea bass dish which Michael, who prowled the tables and chatted during the evening, told us was invented by his son, who is the main chef now; it was very tasty. I had a sea bream with a pine nut and herb dressing, which I found rather too much in quantity and not a particularly stimulating taste.
Overall I would not rate Michael's as the best restaurant in town although it is a very distinctive experience.

“Superb dining experience”

We ordered the fresh grouper and red snapper baked al cartoccio style, set between potatoes, for mains. Very tasty, yet maintaining the delicate taste of the fish. While we waited for our dishes to arrive, we were presented with amuses bouches - fried breaded gorgonzola balls on caramalized onions and puff pastry.

The dessert was scrumptious - a orange chocolate mousse accompanied by red berry ice-cream.

Entertainment was by guitarist Stuart Cunnigham who provided a soothing set of bossa nova favourites. The music was just right - relaxing background music, yet could not help but tap my fingers to the beats.

Michael, the chef, made it a point to introduce himself to patrons at the restaurant, and we chatted with him for a while, which made our visit to the restaurant even more interesting. Besides, the staff were very friendly, and service very efficient.

Will definitely revisit!
