This restaurant has a casual intimacy that makes it seem you were invited over to dinner.
The food was inventive, yet inspired by traditional Nordic cuisine. They source local ingredients, and put them together in imaginative ways. Because they use seasonal ingredients, they don't have a set menu, so to describe each dish might be meaningless, since you may never get a chance to taste any of them.
However, one of the several appetizers epitomizes what Gastrologik is all about. The dish was quail eggs, marinated in a "soy" sauce, wherein they fermented yellow peas (a traditional Nordic ingredient) lie they would soy beans to come up with the sauce. Then cooked the quail eggs so that the yolks were warm and runny inside of the firm and slightly salty albumin.
They also had a recommended wine pairing, which paired some very unusual and tasty wines with their unique food. The pairings were very well done.
All-in-all it was the best dining experience I have ever encountered, anywhere.
