I'll admit it - we were out until about 3am the previous evening and had lavishly partaken of Porto's other well-known speciality, so at midday the following day we were chaffing at the bit for a solid wedge of cholesterol.
The owner of the apartment we'd rented for the weekend was very clear about where we should sample francesinha: "Go to Santiago F. Do not go to the café called Santiago on the same road and do not go anywhere else. At Santiago they grill each layer properly before putting it all together!" This might explain the longish wait during which we soothed our battered livers with a couple of medicinal beers. The service was excellent - all we had to do was to raise a trembling eyebrow and our glasses were replenished.
But when it arrived, it was perfect. Just exactly what we needed at that moment in time: layers of bread interspersed with veal & sausage meat, covered with grilled plastic burger-style cheese and topped off with an egg. Haut cusine? Hardly! But very tasty.
