I'm living in Bruges for a couple of months, and ever since a friend told me about Tom van Loock's patisserie, I've been hooked. Even before you get in, you already feel a buzz, as you can see Tom and his team at work through a large window (which continues inside as well). After coming in, the smell and the display of tarts, friandises and macaroons, just starts to make you feel all excited. I would say choosing is the hardest part.
Service has always been very welcome and warm, either by Tom himself or by his wife. No matter how busy, you always get a smile and hello!
On Saturday and Sunday there are a whole array of typical puff pastries to accompany your brunch, such as croissants or variants containing raisins, apple and vanilla (absolutely delicious), raisins, crème patissière, etc
If you want to brunch, you can eat your order a few houses down the road at Délisa, where they do also serve excellent coffee.
As I have not yet tried their whole assortment, I couldn't say what I like best, however, even choosing between the things that I have tried is too hard. My tip would be: order one of everything!
