I'm living in Bruges for a couple of months, and ever since a friend told me about Tom van Loock's patisserie, I've been hooked. Even before you get in, you already feel a buzz, as you can see Tom and his team at work through a large window (which continues inside as well). After coming in, the smell and the display of tarts, friandises and macaroons, just starts to make you feel all excited. I would say choosing is the hardest part.
Service has always been very welcome and warm, either by Tom himself or by his wife. No matter how busy, you always get a smile and hello!
On Saturday and Sunday there are a whole array of typical puff pastries to accompany your brunch, such as croissants or variants containing raisins, apple and vanilla (absolutely delicious), raisins, crème patissière, etc
If you want to brunch, you can eat your order a few houses down the road at Délisa, where they do also serve excellent coffee.

As I have not yet tried their whole assortment, I couldn't say what I like best, however, even choosing between the things that I have tried is too hard. My tip would be: order one of everything!

This take-away patisserie, opened only a few months ago, delivers Michelin-star confections for those with a sweet tooth. Prices appear high until you bite into one of Tom's wonderful pastries. We tried several over a few days and were never disappointed. My wife has declared his lemon meringues the best she has ever tasted.

An understated, tiny place where Tom Van Loock trained as Classic French Patissier, can be seen at work and who creates the most outstanding pastries in Brugge - and we tried quite a few there in a course of four-day stay. Take a chocolate éclair for example and instead of having it smudged with chocolate, you’ll have it wrapped in a thin layer of dark, smooth, delicious chocolate that will just break gently and melt in your mouth. Every kind of pastry is made to absolute perfection. It’s a must in Brugge. We hope that in the future it will be possible to have a coffee there as well, but for now it’s a take-away place, however since the patisserie is right by the canal, you have an option of getting a coffee from a neighbouring place and have your own mini picnic on the waterside.
