It was really fun to get a chance to see Ghent from the canals on a beautiful afternoon, and the price was right - 6.50 euros for a 40 minute trip (ours was somewhat longer). Unfortunately, I was sitting in the rear, and the engine drowned out nearly everything our guide said. Plus he was translating into at least four different languages. My advice: monopolize a boat with others who speak the same language as you - the fewer languages the guide translates into, the more he/she has a chance to tell you. And sit in front, as far from the engine as you can.

Something every visitor should do. Not expensive, a multilingual (Nederlands, (Dutch), German, English) guide who knows a lot of stories that even I (born and have lived in Ghent) didn't know. And, of course, a view from the water is always different than when you just walk by. Another company offers (for extra money?) some beers, but this one offered a (not so nice) ice-cream. But, no reason to complain, after all it's the scenery that you come for.
And, needed still be said, Ghent is the most amazing and most genuine city in Flanders (this part of Belgium). Almost everyone who visits both Bruges and Ghent prefers the latter.
Most of the buildings you see are period buildings, so not 'rebuild' to look like a film decor. And, at night, this city really lives, students, terraces, great restaurants. And also important, a city that is safe, even at night.

There are many boat tours available from different companies. We were packed on the boat like sardines and the commentary was boring and uninteresting. Felt like slow torture. Worse still: we saw other groups on other companies' boats go by us laughing and drinking Belgium's best beers or champaign. We got an ice cream straight out of the box instead. Definitely do a boat tour, but do it with someone else.

We visited Ghent on a day trip from Bruges. Having already been on a boat trip in Bruges, we decided to try one in Ghent. It was a decent price and lasted quite a while. We saw a lot of landmarks and the guide was great in explaining everything. It was sunny when we set off but decided to throw it down half way round so the driver held us under a bridge till it had passed! Umbrellas were available though! All in all a great way to see more of this fab city; highly recommended.

Having taken the boat trip in Brugges which was poor given the price and the lack of time, I was not sure about this trip however I can only agree with the previous writer, excellent value, an experienced guide with a good knowledge of the sites. Take the trip before anything else and get acclimatised. Worth every penny.
