I have been to the Gross Markt a few times over the past 20 years and it always impresses me. Whatever the season it always looks stunning, although when set up for the Christmas markets it is probably at its best (but I haven't seen it covered in the flowers which looks fantastic too). It gets busy in the middle of the day so if you want good pictures go early, and yes, wear good shoes as the cobbles are uneven. Spend a little money and have a beer or a hot chocolate and watch the world go by enjoying the architecture and atmosphere.
