OK, it was a damned good culinary show. The atmosphere was excellent - not in the last place thanks to the relaxed service (thank you, Stefan). The wines were excellent. Every single thing that was brought on the table was a piece of art. And maybe there is a little problem there. We had the eight course meal, not counting all the amuses bouches and other appetizers. And maybe eight individual courses do not always make a meal. I tend to think the food was more like top level tapas. We had an extraordinary evening - no doubt. But I don't think I will go back very soon, even if I could pay for it.

De Librije is one of those rare breed of restaurants that can truly be classified as an ‘dining experience’ along the lines of say the Ledbury, Martin Berasategui or Sant Pau, but less theatrical than for instance the Fat Duck, Diverxo or Akelarre. The quality of cooking and service are stellar (which is to be expected of a 3 Michelin star restaurant) and the location in the town of Twente (eastern part of the Netherlands) is idyllic.

The restaurant is run by the personable married couple who head the kitchen as well as the front-of-house. Their attention to detail is noticeable (especially to those who stay in their hotel, about 5 mins walking distance from the restaurant) and seems to have no boundaries. The cooking at de Librije is of the highest order, without sacrificing the taste and integrity of the primary ingredient. Compared to it’s 2 Michelin star sister restaurant, Librije’s zusje, the cooking & ambiance are very similar. However, the service at de Librije is a tad bit better than at Librije’s zusje (for instance, at Librije’s zusje we were not offered additional butter).

When we visited de Librije we tried the 8 course tasting menu. Effectively you chose 4 courses (choice of 3 alternatives per course) and the other 4 courses are a surprise. We got to try the following dishes:
-Peas, goat’s cheese and curry
-Northsea crab and black garlic
-Langoustine, celery and vanilla kombucha
-Cod, cabbage, spar pines and raw almonds
-Milk Cow, red beets and bone marrow
- Monkfish
-Bread, Red grapes and goat’s butter
-Egg
-Venison
-Lamb
-BBQ tomatoes, radishes, oranges and watermelon
-Goose liver, unripe strawberries, Madras curry and goat’s cheese
-Epoisses, chorizo and potatoes seep
-3 Blossoms

Where does our experience at the Librije rank among the top restaurants we've visited? Well, in our opinion de Librije is certainly worth a visit and sits comfortably in the top-end range of 3 Michelin star restaurants. It is not the absolute best restaurant that we've tried, but not too far from it either.

The total bill at the Librije came to EUR 550 (including 1 matching wine course and 5 non alcoholic beverages).

What else can I say but stupendous. Everything single element from the creative interludes (the word appetiser is an insult), the bread (gisting for your very own eyes), the wine and the divine, innovative but most importantly sumptuous godly food. Perfection, you are a true artist. There are not enough stars for you!

Food and service were both excellent from start to finish. We stayed in Librije's hotel, we were welcomed with a glass of champagne in the hotel patio area and when it was time for dinner we had the choice to walk or the butler would drive us to the Librije restaurant.

The weather was good enough to have a glass of wine at the terrace before dinner. Count on a 4-5 hour experience when going for the 8 course menu. Wine pairing is highly recommended.

Dinner was one of the best experiences I have had in my life, and the next day at Librije's Zusje we had one the most surprising breakfasts, which was excellent!
