Description: Restaurant Vermeer just opposite Amsterdam’s Central Station in the Barbizon Palace Hotel is one of the finest restaurants in the city. The luxurious Old Dutch décor – marble tiled floors, monumental fireplaces, Delft tiles and plates, austere chandeliers – does suggest something of the master painter’s interiors. But it would take more than a servant-girl’s pearl earring wages to properly enjoy a meal at Vermeer. This is Michelin-starred, high-end, complex, refined European cuisine under the deft hand and watchful eye of Chris Naylor. The menu includes various irresistible multi-course and tasting options, and, while it changes with the season, offers dishes like starter of caviar and Colchester oysters served with veal tongue, truffle, red beet and seaweed chutney, main course of penne pasta with pheasant, walnuts, acorn bread and oloroso crème, and dessert of custard tart with figs, muscovado sugar and raisins. The wine list includes more than 300 labels, and you’ll want to avail yourself of the excellent sommelier’s opinions. Two private rooms can accommodate up to 20 or 30 respectively for memorable celebrations and events.

WE had the seven course from the land menu. It started with 3 or 4 amuse bouche ; one had dry ice smoking all over the prep table.

We choose a Dutch white wine to go with all the courses that was not as dry as I would have liked.

Everything that comes out of the kitchen has fresh herbs from the rooftop garden....very creative and added to the tastes on the plate.

There were probably 3 or 4 pre desserts + the main dessert. it all was excellent.

As usual, we had many questions for our servers and they answered them all. At the end of the meal we met Chef Christopher Naylor and thanked him for a great meal.

Visited Vermeer on the recommendation of a friend. We went for the 7 course from the land menu with wine matching. It was an amazing meal from start to finish, service was great and the sommelier was very informative and great fun. It was expensive but well worth it.

Amazing food, fabulous service - not cheap, but you get what you pay for. Had a gastronomic adventure here - from the dry ice in the appetisers to the popping candy in dessert. Excellent wines perfectly matched to each course. A real treat!

One of the best meals of all time. Ordered the four course option and received four amuse bouche items before the first course. Then there was the pre-dessert and the petit fours after dessert. Best wine pairings I have ever seen, including a German red with a sea bass third course. Definitely has earned the Michelin star.

For my birthday, we went to Vermeer, and were -again- not disappointed!

From the wonderful amuses in the lounge over special cocktails, to the surprise chocolate cake for (extra) dessert: it was all magnificent. We were even invited to have a look at their newly created roof garden with all kinds of herbs (with great views).

All dishes were excellent, the wines splendid. The staff is nice and attentive, the chef enthusiastic and friendly.

You could not ask for a more special (birthday) dinner experience. Highly recommended.
