Description: One of Amsterdam's most remarkable restaurants, situated on the 23rd floor of Hotel Okura Amsterdam, the Ciel Bleu Restaurant has been awarded two Michelin stars and, much like the adjacent Twenty Third Bar, offers a stunning panoramic view of Amsterdam's city centre. This breathtaking vista and the luxurious design, together with the personal hospitality, all combine to create a unique atmosphere. The Ciel Bleu Restaurant's ambitious kitchen staff serve an international cuisine, prepared with seasonal products and characterised by its innovation. The Sommelier's professionalism and close cooperation with Executive Chef and Manager Onno Kokmeijer results in a perfect harmony between wine and food. The Ciel Bleu Restaurant also offers three luxurious private areas: the Starlight Room, the Salon Panoramique, and the Chef's Table in the restaurant's kitchen.

We tried the 6-course menu, and basically I can't disagree with reviewer BangkokAlex below, although I'd be more clement. Strangely enough, for me the most creative and amazing dish of the whole evening was an amuse-bouche, the solid Tom Yum (see my photo sent separately). The 6 courses composing the meal range between underwhelming (scallops with gin&tonic emulsion) to very good (red mullet, king crab with caviar), with most being good (eg the saddle of lamb) - 1-star quality rather than 2-star. However, the restaurant offers probably the best view of Amsterdam from its 32nd floor vantage point, and most importantly, the service is one of the most competent, thoughtful, considerate, elegant yet friendliest...in the world! Definitely 3-star-plus, if that existed! ALL waiters are to be commended, and the sommelier Noël is extremely knowledgeable and even lyrical!

Seeing the great reviews and knowing that this restaurants currently holds 2 michelin stars, we just decided tonight to try it.

The restaurant is has nice decoration and vibe with a great city view. Nothing to complain about.

We ordered the 6 courses menu with wine pairing so we would go to full discovery.

In order to make it objective, i will go through every courses individually:

- 1st course: Scallops ceviche with oyster and gin tonic foam. The oyster was fine and creamy but scallops couldn't be tasted because of the overpowering sourness and bitterness of the grapefruit and the foam. Quite a disappointing start.

2nd course: Royal crab with avocado and mousse and caviar. The dish was so sweet that the crab was completely lost in there and all you could taste was sugar. Chablis wine paired with it was quite fruity and didn't help balance the flavors. Disppointing again.

3rd course: yellow fin tuna. This dish was just plain weird. The tuna was completely bland and all the components in it went in all kind of directions without finding their mark. And the wine paired with it was quite strong so the dish completely disappeared... That was an all low in the meal.

4th dish: Red mullet with baby squids, foam and squid ink couscous. Finally a dish that stood out and felt like in a michelin star restaurant. Beautiful fish with crispy skin, nice balance of flavours and paired wine was well chosen.

5th dish: lamb cutlet and shank with baby vegetable and oxtail. They called the dish rack of lamb at the table, but a rack is composed of many cutlets and i just got the one... Which by the way was so small that it was overcooked anddry. The shank however was very flavorful and moist. The oxtail was dry and didn't belong in the dish. The side vegetable were just sad and bland...

6th dish: dessert was deconstructed cheesecake. The cheesecake itself was good but all the other components on the plate were battling each other and just didn't make sense. At the end, a dessert that i forgot about already. Paired wine was excellent though.

All in all, we didn't have such a great experience as promised. Food was below standards (i mean, 2 michelin stars, come on...), service was good but not as friendly and personal as we would hope.

We are usually good critics but for 422 euros for two people you expect much more than that.

From all the amuse bouche offered, the only that we liked was the Thai influenced, and still the flavors weren't authentic...

Go there only if you reallyyyyyy want to try it, otherwise go to Vermeer restaurant, much cheaper, 10 times better.

Dear BangkokAlex75015,

Thank you for your constructive feedback as this allows us to enable us to improve our service and product even further. We regret that you did not experience the service and quality we are known for on this evening, and that on the night itself we were not aware of this. It’s not only the food that exceeds my expectations, it’s especially the experience that caught my surprise. We sat there from 1830 till 2300 enjoying every moment. The great view, service, style and presentation of the food.
The bill though was high, but it was well worth it.

incredible experience, one of the best i had.
Everyting is just perfect in this 23rd floor "chic" restaurant: food is packed with delicate and creative flavours, presentation is sublime, service is very efficient, discrete, sommelier is a special man who you can trust, and the view so special.. If you can afford it, don't hesitate, seat back and enjoy the experience!

This restaurant has a two star Michelin rating and lives up to it. The dining room is very well decorated although I had expected some of the finer details to be a little nicer for a restaurant with this rating. This is where the criticism stops though. The room is high-up and has incredible sweeping views of Amsterdam. The service was friendly and very professional, but not overbearing or too formal (which is a plus or a minus depending on your expectations). Our party indulged in one of their tasting menus with no regret. All of the dishes were works of art and exhibited the tastes, textures, and contrasts that one would expect of this type of restaurant. Also, matching the artistry of the food were the desserts. After all the good food, drink and conversation, we left happy and satisfied--five hours later! And it seemed like maybe just 2-3 hours. If staying in Amsterdam or at the Hotel Okura, I would highly recommend this restaurant for its romance, food artistry, and views.
