We sought out de Silveren Spiegel as my husband had eaten there years ago on a business trip. It was Saturday night and they were expecting several big parties but the waiter suggested we book for 7 to get in before they got too busy. Obviously lots of visitors to Amsterdam are guided to this characterful restaurant, but it is something of a tardis and seems to be able to accommodate large numbers, and without a drop in staff attentiveness. We sat outside which was very pleasant on a warm evening but had heaters in any case. We had the 4 corse set menu accompanied by wines and enjoyed every mouthful. The ingredients are sourced locally so it really is a truly Dutch dining experience. All the wines are selected and presented by the owner who gives in depth explanations about the choices. The balance of the meal is well-tuned so you feel full but not over-full. It's not cheap but you get what you pay for and an equivalent experience in Britain would cost a great deal more.

Excellent menu beautifully presented. The tasting menu was goid and you can takectheir wine selections (at a premium). In summer you can sit outside. Our enjoyment was hampered by a delay of almost an hour for our main course and other tables were similarly affected. Staff shortages no doubt.

We wanted to start our Amsterdam visit with something more traditional and this place perfectly fit the bill. It is located at the juncture of the old city center and the canal district in a former warehouse dating from 1613. There are two rooms- the front one has a handsome bar and huge fireplace adorned with Delft tiles - one of the table is actually on the hearth. There is another table near the entrance but in its own alcove. The back room is a more traditional looking dining room but has nice fixtures and the remnant of the impossible steep staircase that once led to the storerooms above. The greeting is warm and welcoming and the owner and staff seem genuinely pleased to have you as their guests. The menu is locavore focused and the freshness cannot be doubted. Preparation and presentation are top drawer. We had the crispy chicken thigh and shrimp ball with salad, and the three cheeses and tomatoes to start- unusual and delicious start and lovely to look at on the plates. Next we shared the saddle of lamb for two. Again, delicious and well prepared - cooked perfectly with flavorful saucing and accompaniments. Wine list is varied, broad and we found many good selections. Let them tell you the history of the place from its days as a warehouse, its conversion to a tavern and its role in saving lives during WWII and its more recent rebirth as this charming and interesting dining spot. We urge you to go- it is a very good place.

De Silveren Spieghel (The Silver Mirror) was right across the street from our hotel. Therefore, we originally dismissed it. Walking through Amsterdam, it was hard to find a restaurant that had outdoor seating that was not packed with customers AND looked like the cuisine would be higher end. We found it here.

In reading our Fodor's book, it recommended De Silvern Spieghel. We had had dessert and wine late at night the night before there, so we decided to do dinner.

We arrived at 6:00pm for dinner (with no reservation- which was key, because as the night goes on walk-ins have a rare shot at a table).

We ventured with the five course pre-fixe for 55 Euros a person. Everything was delicious and each portion was just enough! We didn't feel like- "oh, boy, another dish".

I explained to the waiter that I only ate "fins and feathers", and he made sure none of dishes included beef or pork.

The restaurant has a very nice wine list. We enjoyed two bottles and then ended with the wine pairing suggested on the menu for the dessert course.

The service was very on point at the start of our meal but as the restaurant became fuller, the service declined. Our waiter was on his own managing all of the tables. He apologized and gave us a complimentary glass of wine for the wait.
