We are constantly moving through the city and temporarily filling extraordinary empty properties! It's a Moving Circus of food, music and art! This time BAUT is based in Amsterdam West. The Magdalena-Chapel at the Spaarndammerstraat is a historical place. We are open for dinner, drinks, music and cultural events. The chef and owner of BAUT is Michiel van der Eerde. Michiel was one of the judges in tv-show ‘Masterchef Holland’ and received a 10- from one of Amsterdam’s most well-known food critics. BAUT offers an international cuisine. The menu is perfect for ‘shared dining’. Just order a few dishes, share and enjoy. You could also let the chef surprise you with a three, four, or five course menu. Every location of BAUT is different. The interior, however, is always raw and industrial with a lot of art and a laid back atmosphere.

Went on a Monday night, was half full but good atmosphere with the way the room was partitioned. Very knowledgeable and helpful waitress, we chose a three course menu with wines to accompany each course. Superb presentation and great flavours, felt nicely full at the end and sadly no room for dessert. Worth trekking a little way out of the centre for a such a memorable meal. €140 for two including pre-dinner drink, good value given top quality.

If you are a foodie Baut should definitely be on your bucket list. While dishes are small, tapas-like, the high quality of ingredients, preparation and presentation make for a highly-enjoyable treat. The service is incredibly attentive, with several multilingual wait staff members making sure you have what you need.

The menu is not extensive, but there are meat, seafood, and vegetarian options. A good wine list and a full bar. We dined early, which helped with noise, though I suspect it does get loud with a full house.

We had several small plates: favorites include the chicken with roasted endive, and duck-liver pate, and a beet dish that qualifies as my all-time favorite beet dish. Ever. Thinly sliced, mildly sauteed red beet over a dollop of mild burata, with a raspberry mousse and sprig of cress. Undoubtedly, I'm missing some ingredients, but suffice it to say I considered ordering a second dish for dessert.

Finally, another benefit is that Baut is located in a neighborhood, Northwest and a pleasant distance away from the main crush of tourist-heavy areas. Still quite easy to get to.

There is one word I would like restrauteurs and chefs and servers to quit using: 'lukewarm'. Describing a chicken dish, for example, as 'served lukewarm', is seriously unappetizing to an English-speaker. I've seen this description in several local menus and I find it puzzling in a town with so many fluent in English.

Despite that quirk, I feel Baut deserves a much higher rank in the hierarchy of Amsterdam eateries! Give it a try if you're looking for a delicious and inventive taste experience.

We had the 5 course menu and all courses were great. Nice diversity in every dish regarding flavours and textures. The waiter was also nice and enthusiastic, which is often not the case in Adam. All in all a great evening.

This was the second time that I had dinner there this year. The food was absolutely super and nice balanced big compliment for the chef and the staff ! Our waitress was fantastic, super friendly and nice small talk.
