The Zunfthaus-zur-Waag is one of my favorite restaurants in Zurich, I always try to find time to eat dinner there when I visit Zurich. It is situated on the Munsterhof, just off the Bahnhofstrasse, on the second floor of an old pastel-blue guild building. In the wintertime, it is warm and cozy, as the dining room is not large. It has a quiet, intimate atmosphere.
The food is traditional Swiss cuisine, with an upscale flair. For a starter I recommend the Gegrillte Bärenkrebse mit weissem Donau Spargel und Passionsfrucht-Vinaigrette (grilled slipper lobster with white asparagus and passion fruit vinaigrette), a delicious but light appetizer. The Spargelcrèmesuppe mit frittierten Ingwerstäbchen und grillierter Jakobsmuschel (asparagus soup with deep-fried ginger sticks and grilled scallop) is also fantastic.
For the main course, I highly recommend the Kalbs-Cordonbleu gefüllt mit Zürcher Landrauchschinken und „Henggartner Wybergmutschli“ Kartoffelespuma und Frühlingsgemüse
(veal Cordon-bleu, filled with local smoked ham, vineyard cheese, Potato espuma and
vegetables. It is one of their signature dishes and not to be missed. A pairing with the Pommard 1er Cru Les Jarollières, La Pousse d’Or 2004 (a very lovely Côte-de-Nuits) perfectly complements the veal Cordon-bleu, and is a bargain at CHF 85 per bottle.
For the dessert, go with the Crème brulée hit Schokoladensorbet (crème brulée with chocolate sorbet) which is a wonderful pairing of flavors and uniquely done.
I can't say enough good things about this restaurant. To me it represents the essence of Zurich.
