“Only the shadow of its former glory”

Salza used to be one the best pasticcerie in Central Italy --- the freshest ingredients, the perfect decoration of even the smallest cake or "pasta", their home roasted coffee, and, especially, no shortcuts whatsoever (their pastry cream, made with just the minimum flour, was legendary). The prices, of course, matched quality and location.

Some years ago the place changed ownership, from the Salza family (which maintains the catering operations) to a company whose main business is airport catering. They maintained (or increased) the prices, and lowered (sometimes very much) the quality. It remains a good pasticceria, maybe still the best in town, but no longer worth the extra money they charge. Their original pastry cream is gone, replaced with the standard, starch-filled recipe you would find everywhere. Lunches have lost the freshness which attracted both local professionals and tourists.

Avoid their (astronomically priced) gelato, and go instead to Gelateria De Coltelli.

Only one thing remains unchanged -- the unfriendly service.

“Unwanted so-called freebies inflate the prices”

The outside tables at Salza are a nice place to sit to watch the world go by on Borgo Street with a glass of wine or perhaps a cold beer. Unfortunately it seems impossible to just order that. A small beer comes just short of 5 euros which is presumably to cover the cost of the dish of unasked for pastries that come with it. That would be fine if they were nice but the selection of six or seven sausage rolls and vol-au-vents are reminiscent of a seventies cheese and wine party. If you want a reasonably priced drink without the fripperies there are plenty of other options.

“a fest for your eyes”

As you enter this patisserie bar located in the beating heart of Pisa, your eyes (as well as your stomach) will start to celebrate. All the cakes and pastries displayed in the window are there waiting to be chosen and enjoyed with a hot or cold drink. Wide selection of coffees, teas and beverages.
the bar is fully licenced and the atmosphere very posh.
A bit pricey though, but it's well worth a visit.

“Lunch was good”

We had lunch here-- crab salad, fish rice dish, Food was good. The service was just so so. On another day we had a sweet and coffee and sat outside. Of course it is much less expensive if you stand at the "bar" italian style. A very large selections of pastry and candies - makes you want to try everthing.
